Apple cake made from shortcrust pastry

Step-by-step preparation
STEP 1
Products for making dough. Remove margarine for dough and butter for cream from the refrigerator in advance and soften at room temperature.
STEP 2
Preparing the dough for the cakes. 200 gr. Grind margarine with 1 tbsp sugar
STEP 3
Separate 2 yolks from the whites. We don't need squirrels.
STEP 4
Pour the yolks and 1 egg into margarine with sugar, add 3 tbsp. sour cream. Mix.
STEP 5
Sift 1 tbsp flour, add 1 tsp. baking soda, quenched 1 tbsp. vinegar (I use apple cider vinegar). Knead the dough, gradually adding the remaining 2.5 cups of sifted flour. You may need a little more flour.

It turns out to be a very soft dough.
STEP 7
After dusting the dough with flour (or flouring your palms), divide it into 5 equal parts. I use scales. Place the dough balls on a plate and place in the refrigerator for at least 1 hour.
STEP 8
Let's start preparing the filling. To do this, take 1 kg of apples and 0.5 glasses of white wine. This time I used dry white wine. Another time I had white semi-sweet. There isn't much difference.

Wash the apples, peel them, cut them into thin slices. Pour in the wine and place on medium heat. Cover with a lid. As soon as it boils, reduce the heat slightly and simmer for 30 minutes.
STEP 10
Products for the cream: 0.5 liters of milk, 1 tbsp sugar, 3 tbsp semolina, vanillin and 300 gr. butter softened at room temperature.
STEP 11
While the filling is being prepared, cook the semolina porridge. Gradually add semolina into hot milk, stirring continuously.
STEP 12
Bring to a boil, stirring continuously. Boil for a minute and remove from heat. Cover. Let it cool. Stir while warm a couple more times.
STEP 13
When the apples are cooked (they should be soft), remove them to cool.
STEP 14
Turn on the oven at 200 degrees. We take a ball of dough out of the refrigerator and roll it out into a not very thin flat cake, about d26cm. The dough is soft and rolls out easily. Dust a mat or board for rolling out dough with flour.
STEP 15
Line a baking tray with baking paper or place a silicone mat. Bake each cake on a baking sheet for 10-15 minutes. The cake is white on top, golden underneath. I baked on two baking sheets at once, the process goes faster.
STEP 16
We transfer the cake to a separate board and cut it hot to the desired size. I used a ring from a springform pan d25cm.
STEP 17
We bake all the cakes. Grind the trimmings into crumbs.
STEP 18
Preparing the cream. Grind the softened butter with 1 cup of sugar, gradually adding in small portions.
STEP 19
Then 1 tbsp. add semolina porridge. Mix well after each serving.
STEP 20
Pour in vanillin and bring the mass until smooth (at this stage I still used a mixer).
STEP 21
So, the cakes, cream, filling are ready. Assembling the cake. Coat the first cake layer on the golden side with 1 tbsp of cream and place it on the dish with the same side. Place 2 tbsp on top. cream, spread over the cake.
STEP 22
Spread 1/4 of the filling on top, arranging the apple slices with a fork. Place the crust on the apples and repeat the procedure with all the crusts, cream, and filling.
STEP 23
Coat the sides and top of the cake with cream.
STEP 24
Leave on the table for 2 hours.
STEP 25
After 2 hours, sprinkle the cake with crumbs. You can decorate the cake in some other way. I’m just a supporter of minimalism in baking design (because I don’t know how, I don’t have enough time and imagination). Leave the cake on the table overnight. In the morning, put it in the refrigerator.
STEP 26
Brew tea, cut into portions... let's get started! Fans of baked goods with fruit will not remain indifferent.
