STEP 1
How to make stewed zucchini with carrots and onions? Prepare the necessary ingredients for this. Take small zucchini - young ones. These zucchini have not yet ripened the core with seeds and the peel is soft, so there is no need to peel it. The proportions are approximate, so they can be changed in one direction or another.
STEP 2
Peel the onions and carrots and rinse in cold water to remove dirt. Cut the onion into half rings or a little smaller. Carrots can be grated or cut into cubes or circles. Pour some vegetable oil into a frying pan and heat until hot. Place the onions and carrots in the pan and fry for 2-3 minutes over low heat. The onion will become transparent.
STEP 3
Wash the zucchini, dry it and cut off the tails on both sides. Cut the zucchini into large cubes.
STEP 4
Add the chopped zucchini to the pan and toss them with the carrots and onions. Cover the pan with a lid and simmer everything together for 20-25 minutes over low heat. If the zucchini is juicy, some liquid will appear from it. If necessary, you can add a little water.
STEP 5
During stewing, the zucchini will become soft and slightly decrease in size. If you like completely steamed zucchini, you can simmer them a little longer. I like the zucchini to be already soft, but not yet mushy.
STEP 6
Chop some fresh herbs.
STEP 7
Sprinkle the zucchini with salt and spices. Add greens and mix everything.
STEP 8
Stewed zucchini with carrots and onions is ready! Serve them hot. These zucchini will be an excellent side dish for meat dishes. Bon appetit!
