These zucchini have not yet ripened the core with seeds and the peel is soft, so there is no need to peel it. The proportions are approximate, so they can be changed in one direction or another.

    Peel the onions and carrots and rinse in cold water to remove dirt. Cut the onion into half rings or a little smaller. Carrots can be grated or cut into cubes or circles. Pour some vegetable oil into a frying pan and heat until hot. Place the onions and carrots in the pan and fry for 2-3 minutes over low heat. The onion will become transparent.

    Wash the zucchini, dry it and cut off the tails on both sides. Cut the zucchini into large cubes.

Stewed zucchini with carrots and onions is a light, healthy dish that’s easy to prepare! Although my zucchini was young, it was not that juicy. And in the finished dish they did not soften, they kept their shape. For spices I added a little dried basil. I used frozen greens. Simple, fast and tasty, and most importantly - healthy!
