Zucchini salad with cucumbers

STEP 1
How to make a salad of zucchini and cucumbers for the winter? Prepare all the necessary ingredients. It is better to use cucumbers that are small and approximately the same in size. It is also better to use young zucchini. So that the skin is tender and there are no large seeds inside. Choose juicy varieties of carrots with bright colors. Then the preparation will turn out bright and appetizing in appearance. Read the article at the end of the recipe for a lot of useful information about winter preparations.
STEP 2
Wash the cucumbers thoroughly under running water, then cut off the tails on both sides. Cut each cucumber lengthwise into four pieces. Then in half again.
STEP 3
Also wash the zucchini in running water, peel if necessary. I have young zucchini and I didn’t remove the skin. Cut them in the same way as cucumbers - into proportional cubes. Considering that zucchini is larger than a cucumber, cut it not into quarters, but into six to eight pieces.
STEP 4
Wash the carrots in running water with a brush, peel and rinse thoroughly. Then grate the carrots using a Korean vegetable grater, if you have one. If you don’t have a special grater, you can cut the carrots with a knife into thin strips.
STEP 5
Peel the garlic and chop finely.
STEP 6
Place all prepared vegetables in a large saucepan. Pour sunflower oil and vinegar into the pan.
STEP 7
Add sugar and salt to them, and also add a mixture of spices for Korean carrots. I didn't have a ready-made mixture, so I added turmeric, pepper and coriander (some ground and some left seeds). It is coriander that gives this unique aroma to Korean salads.
STEP 8
Mix all ingredients thoroughly to distribute the spices throughout the vegetables. Leave to marinate for a day at room temperature. During this time, stir the salad a couple of times.
STEP 9
After the specified time, the vegetables will release juice, which will be enough to continue working with the workpiece. So, place the salad in clean, pre-sterilized jars. Sterilize jars in a way convenient for you: in the oven, microwave or steam. Cover the jars with iron lids.
STEP 10
Place a towel on the bottom of a large, fairly deep saucepan. Then place the jars in it. Pour hot water into the pan until it reaches the hangers of the jars. Sterilize jars of zucchini, cucumber and carrot salad within 15 minutes from the moment the water boils. Then take out the jars and roll up the washed and boiled lids. Turn over and cover the jars with a blanket until they cool completely. Store the preparations in the cold. Bon appetit!
