In addition to the main ingredients, you can optionally add any vegetables to this preparation, even the most exotic and “inappropriate”. Zucchini, as a fairly affordable product, can be combined with almost all its counterparts from the plant world, including a large number of spices and seasonings.
To prepare zucchini with carrots for the winter as simply as possible, you only need three products - add onions to the first two. And they fry, stew, bake in any form: shredded, cut into circles and rings, grated. The resulting mixture is then rolled into jars while hot. Secondary sterilization is not required - the workpiece is perfectly preserved for several years. To enhance the taste, you can add fresh tomatoes (puree), tomato paste, bell pepper, ketchup and even mayonnaise.
An even simpler way: twist zucchini and carrots cut into slices and segments into jars. As a rule, this is a marinated appetizer that is served immediately after opening. It requires a hot marinade and suitable spices. Vegetables are placed raw. Garlic is added as desired.
Recently, more and more housewives have begun to use a Korean grater for this dish: both vegetables are grated into thin long “twines.” Fill with marinade with a lot of seasonings. And they are either rolled into jars or stored in the refrigerator. They make an amazingly tasty snack that looks very beautiful.
Recommendation: for harvesting it is better to use young and tender zucchini with thin skin, which are tasty on their own. Especially if you plan to make large or medium cuts. It is better to remove hard bones (if any) from vegetables.
