STEP 1
How to make Paramonika salad for the winter? Prepare the products according to the list. Wash the vegetables well and dry. Sterilize the jars in one of the following ways: in a water bath, in the microwave, or in the oven. I use the oven. Rinse the glass jars with soda solution and place them in the oven, wet, with the neck down. Wash the lids and boil. If they are tin, you can place them on a rack in the oven. Sterilize 1 liter jars in the oven for about 15 minutes.
STEP 2
Peel the washed carrots and grate them on a medium grater.
STEP 3
Cut the tomatoes into large cubes or slices, remove the stems.
STEP 4
It is better to take bell peppers of different colors so that it improves the color scheme of the workpiece. Cut the bell pepper in half and remove the stem and seeds. Cut the pepper into strips. Bell peppers should be as meaty as possible.
STEP 5
Peel the onions and cut them into halves of rings.
STEP 6
It is better to take zucchini young, then you do not need to remove the core with seeds and remove the peel. If the vegetables are more mature, peel them and remove the seeds. Cut the zucchini into small slices or cubes, as you like.
STEP 7
Place all the prepared vegetables into a deep saucepan with a thick bottom and walls. Add spices: salt and sugar. Pour in vegetable oil. Stir and put on fire. Simmer the vegetables over medium heat for about 15 minutes, stirring occasionally.
STEP 8
At the end of cooking the salad, pour 9% table vinegar into the pan. When the mixture boils, turn off the heat. Stir the vegetables again. Place the hot salad in sterilized jars, filling them tightly, up to the shoulders.
STEP 9
Cover the jars with lids. There is no need to sterilize the product in jars. Turn the jars upside down, wrap them in a warm blanket and let cool at room temperature. Store in the pantry. Bon appetit!
