STEP 1

How to make beans with vegetables for the winter? Prepare the ingredients according to the list. During the harvest season, when these products are available and cheap, the preparation is not only tasty, but also quite budget-friendly. You can change the set of vegetables at your discretion.
STEP 2

Fresh beans should be soaked for a couple of hours, if they are dry, then leave them overnight. You can use any beans for the salad, depending on availability and taste. After soaking, the beans should swell well, drain the water, and rinse the beans again.
STEP 3

Boil the beans in water until tender, drain the water. Wash and peel the vegetables.
STEP 4

Grate the carrots on a coarse grater or cut into thin strips.
STEP 5

Cut young zucchini into cubes; if the zucchini is already mature, remove the skin, remove the seeds, and also cut the pulp into cubes.
STEP 6

Peel the bell pepper from the seed capsule and cut the pulp into strips.
STEP 7

Cut the tomatoes into several parts, cut out the place where the stalk attaches, and use a blender to turn the tomatoes into puree.
STEP 8

Peel the onions and garlic and finely chop them with a knife. Sauté the onions and garlic in a frying pan with vegetable oil. Place them in a thick-bottomed pan and add tomato puree into the pan.

Place the pan on the stove and simmer the tomato mixture over medium heat, stirring occasionally for about 20 minutes.

Add carrots, zucchini, and bell peppers there and continue to simmer for 25 minutes.
STEP 11

Then add beans to the vegetables, or vice versa, vegetables in a saucepan with beans, whichever is more convenient for you, add sugar, salt, stir and cook the salad for about 15 minutes. Pour in table vinegar, let the mixture boil, turn off the heat.
STEP 12

While the salad is cooking, rinse and sterilize the jars; sterilizing the jars in the oven is convenient. Place the washed, wet jars with their necks on a wire rack in a cold oven, turn on the oven at 150 degrees, and sterilize them for 15 minutes (0.5 liter jars).
STEP 13

Place the hot salad in sterile jars and seal them with lids. Let the jars cool under a blanket at room temperature and store in a cool place. Bon appetit!
