STEP 1
How to make squash caviar for the winter without vinegar? Prepare the necessary ingredients. Turn on the oven to 200 degrees in advance.
STEP 2
If the zucchini is thick-skinned, then cut off the skin. You can leave the skin on young zucchini. Remove seeds if necessary. Cut the zucchini into arbitrary medium cubes.
STEP 3
Place some of the chopped zucchini (there are quite a lot of them, so it is better to bake the zucchini in two steps) on a baking sheet and add a little vegetable oil.
STEP 4
Stir the zucchini and place the baking sheet in an oven preheated to 200 degrees for 15-20 minutes.
STEP 5
Peel the carrots and grate them on a coarse grater.
STEP 6
Place the grated carrots in a preheated frying pan with previously added vegetable oil and fry them over high heat. Since there are a lot of carrots, fry them in parts. Place the finished carrots in a large saucepan.

Roughly, but not very finely chop the pre-peeled onions.
STEP 8
Place the chopped onion in a preheated frying pan with previously added vegetable oil and, stirring, fry it until golden brown.
STEP 9
Place the fried onions from the frying pan into the pan with the carrots.
STEP 10
Remove the baking sheet with the first batch of baked zucchini from the oven and place the second baking sheet with zucchini in it for 15-20 minutes.
STEP 11
Place the zucchini in the pan with the fried onions. Also transfer the zucchini from the second baking sheet to the pan when they are ready.
STEP 12
Remove the stems and skins from the tomatoes. To do this, make a cross cut on each tomato. Next, put the tomatoes in boiling water and keep them in it for 10-20 seconds. Carefully remove the tomatoes from the water (it is better to do this with a slotted spoon so as not to burn your hands). Now you can easily remove the skin. Cut the tomatoes into small random cubes.
STEP 13
Place the tomatoes in a preheated frying pan with vegetable oil previously added to it.
STEP 14
Stirring, simmer the tomatoes in a frying pan until pureed.
STEP 15
Place the fried tomatoes from the frying pan into a common pan.
STEP 16
Add one and a half tablespoons of salt to the vegetables.
STEP 17
Pour one and a half tablespoons of sugar into the pan.
STEP 18
Add half a teaspoon of hot red pepper and three tablespoons of tomato paste.
STEP 19
Grind all ingredients in a saucepan with a blender until pureed.
STEP 20
Place the pan on the stove and, stirring, simmer the caviar over low heat for 35-40 minutes. While the caviar is preparing, sterilize the jars in which you will store it in a way convenient for you. Boil the lids.
STEP 21
5 minutes before readiness, pour one teaspoon of citric acid into the pan with caviar and mix well. Citric acid is used here instead of vinegar and plays the role of a preservative.
STEP 22
Place the prepared caviar while hot in sterile jars.
STEP 23
Close the jars of caviar tightly with sterile lids, then cover them with a warm blanket or blanket until they cool completely.
STEP 24
Store jars of prepared caviar in a dark and dry place, away from heating appliances.
