  1. STEP 1

    STEP 1

How to make simple squash caviar through a meat grinder? Take the products from the list. The proportions are given for vegetables in their unpeeled form. Choose young zucchini. If you have mature zucchini for caviar, be sure to peel the skin and remove the seeds (keep in mind that for the recipe we will count the weight of old zucchini in its peeled form). It is better to take sunflower oil without odor. Tomato paste can be replaced with ketchup without additives, but then the caviar will be a little sweeter.

  2. STEP 2

    STEP 2

Wash the young zucchini, peel and cut into cubes or cubes. The size of the pieces should be such that they fit into the hole in your meat grinder.

  3. STEP 3

    STEP 3

Peel the onions and carrots, rinse the vegetables. Cut the onion into small cubes. Grate the carrots on a medium grater, you can use a chopper or meat grinder.

  4. STEP 4

    STEP 4

Wash the tomatoes, cut out the stem and cut into slices or large cubes.

  5. STEP 5

    STEP 5

Fry the onions and carrots in odorless oil until soft. Set the heat to medium and stir so as not to burn. Grind the cooled vegetables in a meat grinder to make the caviar more homogeneous.

  6. STEP 6

    STEP 6

Grind the zucchini in a meat grinder and place in a sieve to remove excess liquid.

  7. STEP 7

    STEP 7

Grind the tomato slices in a meat grinder. It is not necessary to remove the skin, it will still be crushed.

  8. STEP 8

    STEP 8

Place twisted zucchini without liquid, chopped tomatoes, fried vegetables into a stewing container and stir.

  9. STEP 9

    STEP 9

Add tomato paste and salt, stir again. You need to add extra spices so as not to interrupt the taste of the squash caviar.

  10. STEP 10

    STEP 10

Boil the zucchini caviar over low heat for 1.5 hours with constant stirring. During this time, prepare the jars and lids.

  11. STEP 11

How can we live without caviar in winter?! I decided to make squash caviar according to this recipe. We love garlic very much and add it almost everywhere. For testing, I made 3 jars of caviar without garlic. Simple squash caviar through a meat grinder without garlic came out very tasty, thick, rich and aromatic. I prepared it exactly according to the recipe. I fried the vegetables and minced them in a meat grinder to ensure complete homogeneity of the caviar, as recommended by the author. I twisted the zucchini and tomatoes one by one. I combined everything in a large saucepan. I put ketchup instead of paste, and added only salt as a spice according to the author’s advice. During cooking, stir often so that the caviar does not burn. At the end, I added table vinegar and put it in jars. A simple and affordable recipe for zucchini caviar. Even without garlic, the caviar came out perfect! I really liked the color, taste, and consistency of the caviar. Good recipe! Thanks to the author!

The recipe, in my opinion, is basic. Simple squash caviar can be prepared through a meat grinder with or without garlic. I added garlic to my taste; our family loves it very much, so we add it everywhere possible. In winter, relatives will thank you more than once for a delicious piece of summer.

I have a question about the recipe. Are the weights of vegetables indicated in their pure form or in their unpeeled form?
