How to make simple squash caviar through a meat grinder? Take the products from the list. The proportions are given for vegetables in their unpeeled form. Choose young zucchini. If you have mature zucchini for caviar, be sure to peel the skin and remove the seeds (keep in mind that for the recipe we will count the weight of old zucchini in its peeled form). It is better to take sunflower oil without odor. Tomato paste can be replaced with ketchup without additives, but then the caviar will be a little sweeter.

Wash the young zucchini, peel and cut into cubes or cubes. The size of the pieces should be such that they fit into the hole in your meat grinder.

Boil the zucchini caviar over low heat for 1.5 hours with constant stirring. During this time, prepare the jars and lids.

At the end of cooking, pour in vinegar, stir and bring to a boil again and immediately remove from heat.
STEP 12

Place boiling squash caviar into sterile jars and roll up. This quantity of products produces 7 half liter jars.

Wrap the jars of caviar and leave until completely cool. Store squash caviar in a dark and cool place.
