    How to make zucchini pancakes with semolina? Prepare the products according to the list. It is preferable to take zucchini young, with tender skin and seeds. If your zucchini is old, peel and remove skins and seeds. And weigh them already peeled. Use any vegetable oil, but refined. Wash and dry the young zucchini and eggs.

    Cut the ends off the zucchini. Grate the zucchini (young ones - straight with the peel). If they are young, grate them on a coarse grater; if they are old, it is better to use a fine grater.

I really love zucchini pancakes, but I need to diversify them somehow) I haven’t made them with semolina yet, so I decided to try it. It's just a delight! The pancakes turned out fluffy, soft, tender, and had a crispy crust on top, which is typical for semolina. These zucchini pancakes are even more like cutlets, because... They hold their shape perfectly and are voluminous at the same time. And the zucchini itself is not felt at all. I added a little garlic more for flavor than for heat.
