Yeast pastry pies with meat and potatoes

STEP 1

Let's do the dough first. We cook it on sponge. Pour warm milk into a deep bowl, add a couple of tablespoons of flour, sugar, yeast, stir thoroughly and put in a warm place for at least half an hour. Bubbles should appear on the surface of the mixture.
STEP 2

In a separate bowl, melt the butter, you can do this in the microwave, let it cool. Add salt and beat in the egg, mix thoroughly. Pour the dough into this mixture and mix. Add the sifted flour in parts and knead the dough. Leave the bowl with the dough in a warm place, covered with a towel, for two hours.
STEP 3

When the dough has risen, knead it and let it rise again.
STEP 4

In the meantime, let's make the filling. Peel the carrots and onions, grate the carrots, and finely chop the onion. Fry vegetables in a frying pan in heated vegetable oil. Frying will add a pleasant flavor to the pies. Peel the potatoes and grate them on a coarse grater. Combine the minced meat in a bowl; you can use any meat, potatoes, roasted vegetables, add salt and pepper to taste. Mix the minced meat - the filling for our pies.
STEP 5

The dough is ready, let's move on to the pies. On a floured surface, divide the dough into several parts and roll each of them into a large circle.
STEP 6

Cut out circles from the dough on a plate.
STEP 7

Place a spoonful of filling on each circle and seal the edges to form pies.
STEP 8

Grease a baking tray with oil and place the pies. We put the pies to proof, let the pies rise in a warm place for about 30 minutes, you can put them in an oven preheated to 30 degrees (but the main thing is not to bake them there) or to the radiator. Preheat the oven to 180 degrees. If desired, the pies can be brushed with beaten egg or milk.
STEP 9

Bake the pies for about 30 minutes. When they turn brown, take them out. Meat and potato pies are delicious both hot and cold, with tea or coffee.
