STEP 1
How to make a pie from yeast dough with cottage cheese in the oven? First of all, prepare the dough. Pour warm milk into a large bowl; its temperature should be about 38 degrees, no more, otherwise the yeast will die. Pour yeast into milk, add a spoonful of sugar and 4 tbsp. flour. Mix the dough well, cover the bowl with a towel and let it stand for half an hour. This is approximately how it should rise. When the dough begins to fall, it is ready for use.
STEP 2
As soon as this happens, add melted butter, salt and the remaining sugar to the dough. Mix the mixture with a whisk. Read at the end of the recipe for information on how to melt butter in different ways. Choose high-quality, natural oil for dough, without vegetable fats.
STEP 3
Add sifted flour in portions and knead the dough. Be prepared that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. It should become smooth, uniform and not sticky. Gather the dough into a ball, place in a bowl, and cover with a towel. Place the dough in a warm, draft-free place for an hour to rise.
STEP 4
While the dough is rising, prepare the filling. Choose natural cottage cheese for it; the higher the fat content, the tastier the pie will be. If your cottage cheese is grainy, then punch it with a blender or rub it through a sieve, this will make the filling more tender. Beat the eggs into the cottage cheese, be sure to wash them well before doing this. Add sugar and semolina. Stir until smooth and leave until the dough has risen completely.
STEP 5
The dough should double in size during this time. Place it on a table sprinkled with flour. Roll out with a rolling pin into a layer 1 cm thick.
STEP 6
I took a springform pan with a diameter of 26 cm. Covered the bottom with baking paper. Cut out a circle of dough, slightly larger than 26 cm. And place it in the mold, form the sides.
STEP 7
Place the curd filling on the dough. Flatten it with a spoon. Cut the remaining dough into strips.
STEP 8
Lay the strips on top in the form of a mesh, lower the sides on top and pinch the edges. Cover the cake with a towel and leave to rise for 30 minutes.
STEP 9
Preheat the oven to 180°C. Brush the top of the pie with lightly beaten egg yolk to ensure it browns well when baking. Bake the pie for 30-40 minutes. Baking time depends on the features of your oven; be guided by the appearance of the pie. Take it out and let it cool a little. Then carefully open the pan and remove the pie onto a plate.

Serve the pie warm or cool; it is delicious in any form. Serve the pie with tea or milk. Bon appetit!
