Watermelon fruit cake

Wash the whole watermelon well and cut off its top and “butt”.

It is important not to take away the white pulp, cut off only the red one.

When the core is cut out,

cut the watermelon rind with one cut downwards

And remove the core from the peel. You will get a cylinder like this. To make a piece of the future cake look beautiful on the plate sideways, you can make it no higher than 15 cm. Although this is not for everyone.

Watermelon releases juice, so let it drain and cool in the refrigerator.
STEP 10

The cream is easier to apply to a chilled watermelon. You need to start from the top.
STEP 11

Beat chilled heavy cream with stevia and vanilla until fluffy and creamy. Your mixing bowl should also be cold. I do this with a blender with a mixing attachment - its speed is very high.
STEP 12

Very quickly coat the watermelon with cream, starting from the top and ending with the sides. Then just as quickly decorate with chopped berries and fruits. In the picture you can see an example of decoration.
STEP 13

You can use absolutely any berries or fruits for decoration. In our case, we cut the grapes into 2 halves, and the raspberries too. Peeled pear - into thin slices, kiwi into thin circles. Everything should be thin, because the whipped cream is delicate and will not support the weight of the heavy fruit on the sides of the cake.
STEP 14

It is advisable to serve the watermelon cake immediately so that it does not start to “melt”.
