STEP 1
How to make crispy waffle rolls like in a Soviet waffle iron? Prepare your food. You can use margarine instead of butter, but choose good quality margarine. The amount of sugar can be reduced, depending on your taste. I prepared half a portion.
STEP 2
Melt the butter in any convenient way - in the microwave, on the stove, in a water bath. Read how to do this at the end of the recipe. I heated it in the microwave. Cool the melted butter to room temperature.
STEP 3
Beat the eggs into a bowl, add sugar and vanilla. Beat them with a regular hand whisk. The goal is not to make them fluffy, but just to blend them.
STEP 4
Pour the melted butter into the eggs and mix again.
STEP 5
Add the sifted flour to the egg-butter mixture. Mix the dough thoroughly with a whisk until completely homogeneous. Depending on the quality of flour, you may need a little more or a little less. STEP 6
Pour a few drops of lemon juice into the soda. A reaction will immediately begin between the alkali and the acid, releasing carbon dioxide - it is this that will raise the dough during baking. STEP 7
Turn on the waffle iron to heat up. This will take 10-15 minutes. There is no need to lubricate the panels with anything - old appliances are already so adapted to baking that they do not need it. In addition, the dough contains a lot of oil, it will prevent the waffles from sticking. Place a tablespoon on the bottom panel and lightly spread the dough onto it. Close the lid.
STEP 8
Bake the waffle until golden brown, this will take a couple of minutes. The exact time will depend on the features of your waffle iron.
STEP 9
Carefully lift the pancake with a knife and remove it to a plate. Freshly baked, it is very soft, immediately roll the waffle into a tube. Be careful, she is very hot. But hurry up anyway, literally in a minute the waffle will begin to crumble and break. Bake waffles using all the dough this way.
STEP 10
Serve the waffles immediately or fill them with any cream. Bon appetit!
