    How to make vegetarian pasta? Prepare your food. For pasta, you can use any shape of pasta that you like or have on hand. The main thing is that the pasta is made from durum wheat - it is tastier and healthier. In addition to the vegetables indicated in the ingredients, you can add any others - zucchini, onions, carrots, green beans, cauliflower, broccoli, etc.

    Prepare all vegetables immediately. Wash them and dry them. Cut the eggplant into small pieces. Please note that in some cases there is no need to remove bitterness from eggplants - usually young vegetables, as well as some special varieties, are not bitter. I have just such a variety, I didn’t do anything with it.

    Cut the bell pepper and remove the core and seeds. Cut the pepper pulp into strips.

    Cut the tomatoes into small pieces, just cut the cherry tomatoes in half. If desired, you can remove the skins from the tomatoes.

    Place a frying pan over medium heat and add vegetable oil for frying. At the same time, place a pan of water to cook the pasta. Place the chopped eggplants in the heated oil. Fry them, stirring, for about 5-7 minutes. If during this time the eggplants absorb all the oil (they have this feature), then pour in a little more. By this time the water will already boil. Pour salt into it and add pasta. I'm cooking spaghetti.

    Add peppers and tomatoes to the eggplant in the pan. If you are making pasta with other vegetables, add them in the order of how long they take to cook. Salt and pepper the vegetables. Stir. Reduce heat, cover the pan and simmer until the eggplant is soft, about 5 minutes more. You can also add your favorite spices or seasonings.

    Cook the pasta according to the instructions on the package; it usually indicates the cooking time. The pasta should remain slightly firm, al dente - this way they will not soften and will be tastier. Using tongs or a slotted spoon, transfer the finished pasta directly into the pan with the vegetables. Don't be afraid that water will get in with it - it will make the vegetables juicier. Mix the pasta with vegetables, warm it up a little and place on plates.

I prepared vegetarian pasta as a side dish for fish. I didn’t have olives, so I didn’t replace them with anything. I had a very large tomato, so I used half. I first removed the skin from the tomato. I took the pasta with linguine. I prepared vegetarian pasta at the dacha, where I have an old and not very powerful stove, so I cooked the vegetables a little longer than indicated in the recipe. It turned out very tasty! The eggplant added a slight pleasant piquancy to the pasta, and the tomatoes and bell peppers added a slight sweetness. I also added garlic powder when sauteing the vegetables, which gave the pasta an extra flavor. This dish is a great way to present pasta in a new way and add variety to your everyday menu.
