I made a vegetable stew with beef and potatoes for dinner. It’s not difficult to make, but it turns out very tasty and satisfying. I didn’t have any eggplants, so I didn’t replace them with anything. The peppers I used were Ramiro varieties. It is elongated and thin, so I just cut it into rings. I cut the onion into feathers. I didn't grate the tomatoes. I had frozen tomato puree and used that.
