    STEP 1

How to prepare Uncle Bens from tomatoes for the winter? Prepare the ingredients according to the list. It is better to take tomatoes that are ripe, red, without spoiled areas. Wash them thoroughly under running water.

  2. STEP 2

    STEP 2

If the skin of the tomatoes is hard, you need to remove it by pouring boiling water over each fruit. Cut the tomatoes into halves or quarters depending on the size of the vegetables and place in a deep bowl.

  3. STEP 3

    STEP 3

Using a blender or meat grinder, grind the tomatoes until mushy. If the tomatoes are ripe and soft, you can mash them by hand into a puree.

  4. STEP 4

    STEP 4

Transfer the tomato puree into a thick-bottomed saucepan and place on the fire. When the mixture boils, reduce the heat to medium and simmer the tomato mixture for about 20 minutes, stirring occasionally with a spoon so that it does not stick to the bottom.

  5. STEP 5

    STEP 5

Wash and peel the carrots; if the vegetable is young, its skin is very delicate, you don’t need to remove it with a knife, just wipe the carrots with a stiff brush and rinse under running water. Grate the carrots on a medium grater or chop using a food processor with a grater attachment.

  6. STEP 6

    STEP 6

Wash the bell pepper and cut out the stem and seed pod. Cut the bell pepper into cubes or strips.

  7. STEP 7

    STEP 7

Peel the garlic cloves and chop finely.

  8. STEP 8

    STEP 8

Peel the onion and cut into medium cubes.

  9. STEP 9

    STEP 9

Place carrots and onions in a saucepan with tomato puree. Mix everything and simmer over low heat for about 20 minutes, stirring occasionally.

  10. STEP 10

    STEP 10

Add bell pepper and simmer for about 15 minutes. Then cooked garlic, sugar, salt, pour in vegetable oil. Fans of spicier snacks can add a chopped piece of hot pepper. Stir the mixture and cook for another 5-7 minutes. Pour in table vinegar, stir and leave the vegetable mixture on the fire for another 5 minutes. Remove the pan with vegetables from the heat.

  11. STEP 11

    STEP 11

You need to prepare the jars for the preparation in advance: wash them with soda and sterilize them in a water bath, in the oven or in the microwave. The lids for the jars should also be washed with soda and boiled.

  12. STEP 12

    STEP 12

Place the snack in jars, immediately roll them up and leave them at room temperature until completely cooled upside down under a warm blanket.

With this recipe, it was decided to finish preparing for the winter this year, it’s already October) “Uncle Bens” I never cooked or even tried the original, in those days this snack was not available to my family. Moreover, I was taught that all preparations should be homemade) Since I had sweet peppers and tomatoes in abundance, the recipe suited me. The composition is similar to lecho. I always cut onions in half rings for salads, but here in cubes, it’s really unusual for me) It was quickest to put the tomatoes through a meat grinder, especially since I was cooking three servings at once. I believed in the result! I also cut the pepper into strips. For lecho, I still cut it into large pieces. I really liked the result. The snack is not spicy, tasty, slightly sweet. In winter it will be a wonderful addition to dinner. I had already run out of jars by this time, so I rolled them into large 1.7 liter jars. Seven cans came out. Thanks for the new recipe, I’ll write it down in my book!
