Rinse the chicken fillet, dry with paper towels and cut into thin, long pieces.

Wash the carrots, peel and chop into small strips.
STEP 4
Wash the zucchini, peel and cut into cubes slightly thicker than carrots.

Wash the red bell pepper, remove the seeds and cut into strips.
STEP 6
Pour water into a saucepan, bring it to a boil and add salt. Place the noodles in boiling water and cook for about 5-7 minutes, stirring occasionally to prevent the noodles from sticking.

Place the finished noodles in a colander and rinse them under cold boiled water.
STEP 8
Heat the vegetable oil in a wok or heavy-bottomed frying pan over high heat and quickly fry the chicken pieces.
STEP 9
Next, add the chopped vegetables to the pan and quickly fry over high heat.
STEP 10
At the last stage, add the prepared noodles to the pan, pour in the soy sauce and, stirring, cook the udon for 3-4 minutes until cooked.
STEP 11
Place hot udon in bowls, sprinkle with toasted sesame seeds and serve. Bon appetit! Noodles can also be consumed cold; this is how the Japanese most often serve noodles in the summer, flavoring them with chopped green onions.
