    Sift premium wheat flour into the dough in parts, kneading the dough first with a spoon and then with your hands. In any baking, it is important not to overdo it with flour. Focus on the consistency of the dough. If it sticks too much to your hands, then gradually add more flour. Even from the same manufacturer, flour in one batch can vary greatly in quality due to the individual characteristics of the grain. I'm not even talking about different types of flour!

    As soon as the dough stops strong! stick to your hands, it's ready. It's better to be light! sticky, and will resemble a basketball in elasticity. There’s no way you can make a delicious pizza out of this dough. Gather the dough into a ball and, covering with cling film, leave to rise in a bowl in a warm place for an hour. Ideal conditions for proofing dough are high humidity and a temperature of about 40 degrees.

We had a pizza day over the weekend. My daughter asked me to cook it, but it’s really been a long time since we spoiled ourselves with this delicious pastry) I made several types at once. One of them was thick crust pizza in the oven. I generally like all types of dough, both thin and thick. But the “American” version is always more satisfying) For this pizza, I kneaded the dough exactly following the recipe, only when kneading it I added another spoonful of flour. The dough turned out fluffy and pleasant to work with. I didn’t roll it out, but kneaded it with my hands, the thickness turned out to be impressive, I was even worried that it wouldn’t bake. But it was baked perfectly, the dough inside was very porous, airy, and soft. The very edge, which without filling is a little crunchy. For the filling I used good quality boiled sausage. I had black olives, but we don’t really like them, so I added a few rings. I used Maasdam cheese, it melts well and is delicious. The result was a very fluffy, juicy and tasty pizza. My husband said it was a pie) And the children ate it first.
