    Check the readiness of the potatoes with a fork or knife. When the potatoes begin to crumble, turn off the heat. Drain the water, mash the potatoes into a puree, pour in the milk and add a piece of butter. Mix. Potato filling for kystyby is ready. This dish can be prepared with leftover mashed potatoes from lunch or dinner, but the mashed potatoes should not be bland and gray.

    While the puree is cooling (but by the time the kystybya is prepared, the puree should be warm, but not hot), we will make the dough for the flatbreads. Sift wheat flour into a deep bowl. Flour must be sifted in order to saturate the product with oxygen and remove foreign impurities from the flour.

    Pour warm milk and melted butter, cooled to room temperature, into a bowl with flour, beat in a chicken egg. Add salt, sugar and soda, slaked with table vinegar.

    Let's move on to preparing the flatbreads. Divide the dough into pieces the size of a tangerine. Roll out each piece into a flat cake with a diameter of about 15 centimeters. But you need to consider the size of the pan in which the cakes will be fried.

    Fry the flatbreads in a dry frying pan with a thick bottom. Fry the tortillas for 3-4 minutes over medium heat on each side.

    We remove the flatbreads from the frying pan, immediately grease each of them with melted butter and fill them with potato filling, bend them into two parts, but do not fasten the edges tightly. Serve the kystyby to the table. Bon appetit!

I once watched a cooking show on TV in which kystyby was prepared; before that I knew nothing about these delicious flatbreads. And so, having seen on the website a recipe for Tatar flatbreads with kystyby potatoes, I started cooking. The dough for flatbreads is very simple to prepare, the main thing is to knead it as thoroughly as possible so that it becomes smooth and homogeneous. I used to make lavash dough, which, in my opinion, is similar to kysty, but it does not use soda and vinegar. The new experience of making dough was a success. The dough turned out to be soft, elastic, not sticky, rolled out well into a thin flat cake, and browned when fried. I greased the finished flat cakes with a small amount of butter, then filled them with mashed potatoes. It turned out very tasty! The flatbreads came out very soft with a delicate creamy taste, combined with the filling - wonderful! Thank you so much for the recipe!
