We take soft, creamy cheese, it is the most neutral in taste, so it will harmonize well with avocado and will favorably highlight and complement the taste of the fish itself. We try to choose a soft avocado, it is more ripe. If you have time, you can buy them in advance; they ripen well.

    Wash the avocado, peel off the skin, cut it in half lengthwise and remove the pit. I got an avocado with an almost white pit, but it was soft. I thought that it was green and would be bitter, but everything worked out, the taste was normal. Apparently this was just the variety. If the avocado is very ripe, then cut it without peeling, take out the pit, and cut the flesh into squares with a mesh and scoop out with a teaspoon. It’s true that they almost never bring such ripe ones.

    Cut the peeled avocado into segments and place in a blender bowl. To prevent the pulp from darkening, immediately squeeze it out and pour over fresh lemon juice; one wide ring was enough for me. Process until chopped into small pieces.

    Add soft cheese and chop everything again. At this stage, you can add various fresh herbs, but this is optional and to your taste; I prefer the neutral taste of cheese paste.

    The paste should be this homogeneous, with a light pistachio color. Try it, you may need to add a little salt and then scroll through everything again. If you add greens or pickled cucumber, small fragments of greenery will be visible, which will also enrich the taste and add visual effect.

    Use a sharp knife to cut lightly salted red fish into very thin slices across the entire width of the fish. If you prepare the slices in advance, cover the fish and store it in the refrigerator.

    I will serve the fish with avocado in tartlets. You can fill them with cheese paste either with a teaspoon or from a cooking bag.

    Then decorate with a thin slice of fish, rolling it into a ring, straighten the petals a little, you get a bud. Add a small sprig of herbs. That's all, a very simple, unpretentious, but pleasing to the eye presentation is ready. After all, everything is prepared quickly, and it is better to serve immediately so that the tartlets do not have time to get wet. There is no need to prepare this dish in advance, just slices and cheese paste.

When I cook salmon (and other fish, it doesn’t matter), in addition to lemon juice, I also add small pieces of lemon and place them directly on the fillet.

Darinochka, what an interesting sauce, I’ve never tried one like this, avocado itself is fatty and in a sauce it’s perfect for our dish, garlic and onions will also add their own flavors, you don’t even have to add mayonnaise, lemon juice will soften it enough and dilute the consistency, thanks for the original recipe and new taste! Svetlana, wonderful recipe! I just love avocado, but more often I eat it only with salt and pepper, I’ll definitely try this option. And yes, I didn’t understand what kind of comments were under the recipe from six years ago, from 2013. The recipe seems to be new, and you’ve been registered on the site since 2017, what does that mean? It looks kind of weird.
