Tarte Tatin with Apples - a classic French pie

Beautiful, original, melts in your mouth, a holiday every day! Tarte Tatin with apples is a classic French pie that is baked in reverse: shortcrust pastry on top and caramelized fruit on the bottom. The finished tart is turned over onto a plate, and the filling ends up on the dough, like a regular pie.

Step-by-step preparation

Cooking timeCooking time: 1 hr 30 mins
  1. STEP 1

    STEP 1

How to make tarte tatin with apples - a classic French pie? Start cooking with the dough. Prepare food for him. How to make the dough? Take high-quality butter that complies with GOST, the higher its fat content, the better. Remove it from the refrigerator in advance to soften it.

  2. STEP 2

    STEP 2

Take a bowl of a suitable size, sift flour into it, add salt. Make a well in the center of the flour.

  3. STEP 3

    STEP 3

Beat an egg into it, add sugar. Cut the butter into small cubes. Place pieces of butter in a bowl with other foods.

  4. STEP 4

    STEP 4

Add water little by little and knead into an elastic dough. The amount of water depends on the state of the dough. It may take a little more or less. Gather the dough into a ball, wrap in cling film and refrigerate for 30 minutes.

  5. STEP 5

    STEP 5

Roll out the chilled dough into a circle the same diameter as the baking pan. For convenience, you can roll out the dough on a round cutting board with a diameter equal to the diameter of the baking dish.

  6. STEP 6

    STEP 6

Cover the rolled out dough with cling film and return it to the refrigerator.

  7. STEP 7

    STEP 7

Meanwhile, make the filling. Prepare food for her. How to make the filling? Choose apples that are ripe, aromatic, and firm. The butter, as for the dough, is of high quality, GOST. You can use cane sugar, it will give the filling a piquant note.

  8. STEP 8

    STEP 8

Place butter in a saucepan, pour in water and add sugar. Heat over medium heat until light amber caramel forms.

  9. STEP 9

    STEP 9

There is no need to stir the mixture with a spatula, otherwise the caramel will form a lump around the spatula. Simply shaking the saucepan is enough.

  10. STEP 10

    STEP 10

Peel the apples. Cut in half and remove seeds. Then cut the apples into slices.

  11. STEP 11

    STEP 11

Pour caramel into a greased baking dish.

  12. STEP 12

    STEP 12

Place apple slices on top of the caramel. There should be a lot of apples, as they will shrink slightly in size when baked. Place them on top of each other, overlapping, in a circle.

  13. STEP 13

    STEP 13

Cover the apples with dough. Fold the edges of the dough inward to form mini sides when turning. Make a small cut in the center of the dough to allow steam to escape. Bake the tarte tatin for about 30 minutes in an oven preheated to 180°C. The dough should be evenly golden.

  14. STEP 14

    STEP 14

Turn the finished tart over onto a plate so that the apples are on top and the dough is on the bottom. Cut the tarte tatin into portions. Serve the pie in any form - it's good warm, with a scoop of ice cream, or cold, with hot coffee. Bon appetit!

The pie is very tasty! Relatives rated it 5! Tender, melting in your mouth, moderately sweet, with a juicy filling! Magnificent! I made tarte tatin with apples - a classic French pie for the first time. I kneaded the dough and left it in the refrigerator for half an hour. She peeled and cut the apples into slices and made the caramel. I immediately poured it, hot, into a greased form, put the apples there, and covered the apples with dough on top. I tucked the edges of the dough inward to create sides when turning the tart over. I made a small hole in the middle for steam to escape. I baked it in the oven for 40 minutes at 220°, focusing on the capabilities of my oven. The dough was well browned and the aroma was extraordinary! Taking the pie out of the oven, I waited for it to cool. Then I turned the tart over onto a cutting board so that the filling was on top. My first tart baking experience was very successful! And all thanks to the recipe! I advise everyone to try this wonderful pie. Thank you so much!

I'm glad that the bottom didn't burn! I made the recipe for the second time. The first time I didn’t follow up enough, and my pie was burnt (but it was my own fault). The second time everything is much better! Sprinkled with powdered sugar for added beauty.

Hello! Can you tell me what the diameter of the mold is? I have 26cm with fairly high sides, I’m wondering if it will fit or not
