The cooking process is extremely simple and straightforward). My zucchini is also young, I grated it with the skin on. At first I started grinding it on the side with large teeth, but decided that it would be better to grind it on the middle one. This makes it more tender in my opinion. There wasn't a lot of liquid this time, so I didn't drain it. I put 4 heaped spoons of flour. Here you need to look at the consistency of the dough. I got it thick and viscous. I fried the pancakes over medium heat to get a golden, appetizing crust. If I fry pancakes in a sufficient amount of oil, be sure to place them on a paper towel to absorb excess fat. The pancakes turned out to be fried, but at the same time soft and easy to roll up. And these rolls can be dipped in various sweet sauces, jam and honey.
