STEP 1
How to make sweet rolls at home from pancakes? First, prepare the dough. Prepare the necessary ingredients. Remove chicken eggs from the refrigerator in advance; they should be at room temperature. Wash them thoroughly with a sponge and dry with paper towels.
STEP 2
Beat the eggs into a suitable container and beat them with sugar with a mixer or whisk until light foam forms. To prevent the pancakes from turning out dry, add a spoonful of sour cream 15-20%. Also add 1 tablespoon of refined vegetable oil. Beat the mixture again until smooth.
STEP 3
Be sure to sift the flour into a separate bowl to saturate it with oxygen. Also sift the cocoa powder, maybe along with the flour. Stir.
STEP 4
Pour half the flour and cocoa into the liquid egg mixture and stir. Pour in warm milk and whisk everything again. The milk should be warm (about 30 degrees), not hot, otherwise the flour will boil and lumps will form. Add the rest of the flour mixture and baking powder. Mix everything carefully again, achieving a smooth, uniform consistency without lumps. The dough should be as thick as liquid sour cream. Leave the dough for 20 minutes.
STEP 5
How to prepare the filling for sweet rolls? Prepare the necessary ingredients. Take soft cream cheese or cottage cheese of any fat content. Wash the fruits and dry with paper towels.
STEP 6
Place the cream cheese in a container, add powdered sugar to taste or 1 tablespoon. l sugar. Sugar can be replaced with a sweetener. If desired, add vanilla sugar or cinnamon (0.5 level teaspoon). Add 2 tablespoons of sour cream to the cheese mixture as needed and stir. If you use cottage cheese, beat it until smooth in a blender or rub through a sieve.

Peel the fruits and cut into thin slices.

Lightly grease the bottom of the pancake pan with refined vegetable oil. Reheat well. Pour the dough into a ladle and spread it throughout the pan. Do not pour too much batter, otherwise the finished pancakes will be too thick. Pancakes bake quickly - a little less than 1 minute on each side. Make sure the pancakes don't burn. Place the finished pancakes in a stack on top of each other on a flat plate.
STEP 9
Apply a thin layer (about 1 tablespoon) to the pancake with the cheese mixture. Place strips of different fruits side by side.
STEP 10
Roll the pancake into a tight tube. Use a sharp knife to trim off any uneven edges. Cut the pancake tubes into pieces of the same size.
STEP 11
These are the sweet rolls with curd filling and fruit! For decoration I used caramel topping, fresh mint and frozen berries. You can pour melted chocolate or glaze over it. Serve pancakes with sour cream and sweet sauces.
