Steppe-style pork

Pork in a very tasty potato coat! I don’t know where this delicious dish got such an interesting name from - in my opinion, it has nothing in common with the steppes or a fire!) But, as they say, “what I bought for is what I sell for!” Steppe-style pork is a very nourishing and juicy dish.

    Prepare the ingredients.

    Wash the meat, dry it, cut it into small chops (approx. 0.8-1 cm), lightly beat it (it’s easier to beat it by covering it with cling film or a plastic bag to avoid splashes). If the pieces of meat turn out to be large, then cut them in half, otherwise, wrapping it in a fur coat will result in very large pieces! Season the chopped meat with salt and pepper.

    Peel the onion, chop not finely, but not coarsely. Finely chop the greens, peel the garlic.

    Prepare the “coat” for chops: Peel the potatoes, grate them on a coarse grater, add onions, herbs and garlic squeezed through a garlic press. Mix well. Add eggs, salt and pepper. Mix well again.

    Next add sour cream and mayonnaise and mix. Then add flour and mix well again. Now you can start frying.

    Spoon onto a hot frying pan with a spoon and place a thin flat cake made from a potato “coat”, slightly larger in size than a piece of meat. Place 1 piece of meat on it and cover with another layer of potato mixture on top. Fry over low heat until golden brown, carefully turning over!

    Place the fried chops on a baking sheet or baking dish greased with vegetable oil (depending on the number of chops you get). Pour in cream.

    Send to heated to 200 gr. oven for 25-30 minutes.
