Soup with rice and beans in a slow cooker

Healthy, nutritious soup with a lot of protein! It got colder on the street, the apartments weren’t warmed up, and despite the fact that it’s almost summer on the calendar, you want hot soup. This is not light, but satisfying and warming. So today I have soup with beef, rice, potatoes and beans. For weight watchers, potatoes can be removed from the ingredient list

  1. STEP 1

    STEP 1

Prepare the necessary ingredients. Turn the multicooker into frying or baking mode to heat it up. You will learn all the subtleties of choosing rice by reading the article on this topic. Link at the end of this recipe.

  2. STEP 2

    STEP 2

Peel and chop the onion and garlic. Grate the carrots on a coarse grater. Fry in vegetable oil in a slow cooker until golden brown.

  3. STEP 3

    STEP 3

When the frying is ready, add tomato paste. Stir and fry for another five minutes.

  4. STEP 4

    STEP 4

Then add bay leaf and allspice. Simmer under the lid closed for a couple of minutes and place the roast on a plate.

  5. STEP 5

    STEP 5

Peel and cut the potatoes into cubes. Fill with water to get rid of excess starch. Rinse the rice and add water too.

  6. STEP 6

    STEP 6

Rinse the meat, remove excess films, if any. Rinse the beans. Place everything in the microcooker bowl and fill with one liter of water. Close the lid and cook in soup mode for one hour. After half an hour, you can open the lid and collect the foam that has formed from the walls. Cooking times are approximate, be guided by the operating characteristics of your equipment. Read more about how multicookers work in the article at the end of this recipe.

  7. STEP 7

    STEP 7

At the end of the program, add drained potatoes, rinsed rice and frying until clear. Close the lid and simmer for another hour. During this time, the meat will finally become soft and the beans will be cooked.

  8. STEP 8

    STEP 8

The soup is ready! You can serve it on the table. I serve this soup with croutons, sour cream, and chopped herbs. For those who like it spicier, you can add hot pepper.

I cooked chicken legs, there was a decent amount of broth left. I cooked a very tasty soup using it according to the recipe for soup with rice and beans in a slow cooker. However, I cooked the soup without beans, which, unfortunately, I didn’t have. Setting the “fry” mode on the multicooker, I fried the carrots and onions. Then I added tomato paste to the frying. I first diluted it in a small amount of broth and poured it into a bowl with vegetables. I also added chopped parsley and dill for flavor. After stewing the vegetables for two minutes, I put chopped potatoes, rice, and bay leaves into a bowl, added broth, and set the multicooker to “soup.” Cooked the soup for 1 hour. It turned out very tasty, aromatic, thick and satisfying. Thank you very much!
