Snack muffins with ham and cheese

Step-by-step preparation
STEP 1

Cut the ham and cheese into small cubes. Leave a little cheese and grate it - we will sprinkle it on the muffins. Wash and chop the green onions.
STEP 2

Place the eggs and milk in advance from the refrigerator on the kitchen table so that they warm up a little. Beat the eggs into a deep bowl, add salt, sugar and black pepper, beat everything with a whisk or mixer.
STEP 3

Pour milk and melted butter into a cup with beaten eggs. Mix with a whisk.
STEP 4

Sift the flour and mix with baking powder. Instead of baking powder, you can take soda and quench it with vinegar or citric acid. Pour the flour mixture into the bowl with the liquid mixture. Mix lightly and very carefully with a spoon. There is no need to bring it to homogeneity, as long as the flour is well mixed and that’s it.
STEP 5

Pour the prepared ingredients into the bowl with the dough: chopped ham, cheese and green onions.
STEP 6

And again lightly (!) mix with a spoon. Our dough is ready.
STEP 7

Preheat the muffin tins in the oven. I always do this so that the dough doesn't stick. Grease them with butter and sprinkle with breadcrumbs or flour. From the amount of dough received, I got 11 muffins, but there were only 12 cells - one was left empty. Place a tablespoon of dough into the molds.
STEP 8

Place the muffins in the oven, preheated to 180 degrees. Bake them for 30 minutes. 5 minutes before they are ready, remove them from the oven and sprinkle with grated cheese. We put it back to finish baking. The finished muffins come out of the molds very well. Remove them immediately and serve hot.
