    How to pickle honey mushrooms for the winter? Collect mushrooms in the forest. In the recipe, I pickled autumn honey mushrooms - these are those that are light brown in color and have small scales on their caps.

    Carefully sort through the honey mushrooms, remove forest debris, remaining soil, leaves and grass. Wash the mushrooms very well in clean cold water and then rinse.

    Place the mushrooms in a saucepan, cover with cold water and place over high heat. When the water starts to boil, white foam will appear, skim it off using a large spoon. Reduce the flame to moderate and cook for about half an hour.

    Drain the mushrooms in a colander and rinse under running water.

    Peel the onion and garlic. Cut the garlic cloves into two or four pieces. Pour water into a large saucepan and add mushrooms. Also add garlic, bay leaf, cloves, peppercorns and onion.

    Place the pan on the stove. Add salt and sugar. Bring to a boil, then reduce the flame to low and cook the mushrooms for another 10-15 minutes. Finally, pour in the vinegar and leave on the stove for a few seconds. Remove the onion; it will no longer be needed. The onion has already given its taste and aroma to the marinade.

    Place honey mushrooms in pre-sterilized jars and fill with marinade. Close the jars with sterile lids. Turn the workpiece upside down, wrap it in a towel and leave at room temperature until it cools completely.

This was my first time pickling mushrooms for the winter. Before this, I had only made quick pickled champignons. For some reason, it always seemed to me that pickling mushrooms was a rather complicated task. But it turned out I was wrong. Thanks to the recipe for pickled honey mushrooms in jars for the winter, I simply changed my mind. I did everything strictly according to the recipe. I didn’t think that marinating honey mushrooms would take so little time. The mushrooms turned out to be very aromatic, spicy, quite salty, but not over-salted. These pickled mushrooms are a great addition to dinner. Zhemchuzhina, thank you very much for the recipe!

Wonderful recipe! But I over-salted it a little, measuring out the salt with heaping spoons... It’s still delicious and beautiful! The marinade is crystal clear, just enough vinegar. If I hadn’t over-salted, then you could go straight from the jar into the bowl, add the onion and And here is an example from me of prepared honey mushrooms according to this recipe
