STEP 1

How to make a simple and delicious chocolate cake? Prepare your ingredients. Take the highest grade flour. Wash the eggs and dry with napkins. Beat the eggs into a deep and wide bowl, add sugar and beat everything with a mixer into a fluffy mass for several minutes.
STEP 2

While the eggs are whipping, pour milk into a saucepan and place on the stove. Add butter and bring milk to a boil. Wait for the butter to completely melt. Sift the flour into a separate bowl, add soda to it. Alternately add the flour mixture and milk mixture to the beaten eggs. Usually 2-3 approaches are enough. Gently mix (do not beat!) everything into the dough by hand, using a whisk, so that the dough does not lose its fluffiness. Also gently stir in the cocoa.
STEP 3

Pour the finished dough into a baking dish (20cm) and place in the oven, preheated to 180 degrees, for 45-60 minutes. Be guided by your oven. The finished biscuit will spring back when pressed. Remove it from the oven and cool completely. Wrap in cling film and refrigerate for several hours to rest. Before assembling the cake, cut the sponge cake into 3 layers.
STEP 4

For the cream, use cream with a fat content of at least 33% (less fat will not whip). Whip the chilled cream with the powdered sugar until it forms a fluffy, stable cream. For tips on how to whip cream correctly, read the steps below.
STEP 5

Soak the sponge cakes with syrup (you can use chocolate, sugar or just water), layer with cream and assemble the cake. Also grease the top and sides of the cake with cream and try to level it as best as possible. This is necessary so that the finished cake with chocolate glaze looks smooth. Place the assembled cake in the refrigerator for several hours.
STEP 6

For chocolate glaze, break the chocolate into pieces, pour in cream and leave to warm. Stirring constantly, melt the chocolate and bring the mixture until smooth. Remove the mixture and add butter to it. Stir until it melts. If the glaze is a bit thick, you can add a little cream at this stage. Cool the finished glaze to room temperature.
STEP 7

Before filling the cake with chocolate, place it in the freezer for an hour. Then pour the chocolate glaze over the cake. Let the excess chocolate drip off. Sprinkle the bottom of the cake with grated chocolate and place on the prepared surface. Whether it's a plate or a cake base. Due to the fact that the cake was slightly frozen before pouring, it is convenient to work with and hold it in your hand. Decorate the finished cake to your liking with seasonal berries or fruits.
