Let's prepare the ingredients for the grated pie with jam.
STEP 2

Place the softened butter in a bowl (if you don’t have time to wait for the butter to soften at room temperature, you can melt it a little in the microwave), add sugar and beat in the eggs. It is better to add the eggs one at a time, beating the mixture with a mixer each time.
STEP 3

Beat the ingredients with a mixer until the mixture is homogeneous in consistency.
STEP 4

Add a pinch of salt and baking powder and mix.
STEP 5

Add sifted wheat flour and knead into an elastic, smooth dough. Roll it into a ball. There is no need to knead the shortbread dough for a long time, otherwise the pie will turn out hard.

Divide the dough into two parts, one of which will make up a third of the entire kolobka, remove a small piece, wrapped in cling film, in the freezer for 15 minutes.
STEP 7

Roll out the remaining dough into a rectangular or round layer with a margin around the edges (according to the baking shape of the pie) about 0.5 centimeters thick. Grease the mold with butter. Place the dough in the mold, making small borders.
STEP 8

Spread the jam onto the dough, spreading it out in an even, thin layer. You can use any jam according to your taste and availability, the main thing is that it is thick and does not leak to the bottom of the pan when baking the pie. In addition, liquid jam may leave the bottom layer of the pie damp. Instead of jam, you can use any jam.
STEP 9

Remove the remaining dough from the freezer and grate it into a bowl. Sprinkle the topping evenly with sand crumbs so that the jam does not show through. Preheat the oven to 180 degrees. Place the pie in the oven for 25 minutes. It should brown slightly on top.

Remove the pie from the oven, place in a dish, and let cool. Sprinkle powdered sugar on top and cut into portions.
STEP 11

Serve the pie with tea, coffee or milk. Enjoy your tea!
