STEP 1
How to make shortbread pie with cottage cheese and banana? Measure out the required ingredients for the dough. The butter should be cold. The amount of sugar can be adjusted to your taste.

Mix flour with baking powder and sift. The flour will be enriched with oxygen, and the dough will rise better during baking. And the finished pie will be tender and crumbly. Add sugar and salt to the sifted flour and mix.

Grate the butter into the mixture of dry ingredients on a coarse grater.

Rub everything quickly with your hands until you get crumbly crumbs. It is important that the butter does not have time to melt from the warmth of your hands, otherwise the shortbread dough after baking will turn out to be protracted and much less crumbly.

In a small bowl, beat the egg until smooth.

Add the beaten egg to the butter crumbs, stir.

Quickly knead the shortbread dough, place it in a bag or wrap it in cling film and put it in the refrigerator for 20-25 minutes.

Meanwhile, prepare the filling. It is better to take ripe, sweet bananas to make the pie more aromatic and tasty. Cottage cheese is suitable for any fat content, soft. The softer the cottage cheese, the more tender the filling will be.
STEP 9
Wash the bananas, peel them and cut them as desired. Place bananas, cottage cheese, egg, sugar, vanilla sugar and sour cream in a blender bowl. Add the amount of sugar to taste. I added a little. The sweetness of the filling depends on the ripeness of the fruit.

Grind everything in a blender until a homogeneous, smooth mass.

Remove the chilled dough. I left some dough to decorate the top of the pie. The rest of the dough was rolled out between two layers of cling film into a round layer. Its size should be larger than the diameter of the mold.

Cover the bottom of the baking dish with parchment and lightly grease the sides with vegetable oil. My mold diameter is 20 cm. Place the dough in the mold and form the sides of the pie. Place the curd filling on the dough and smooth it out.
STEP 13
If the sides are a little higher, lower them to the level of the filling.
STEP 14
I rolled out the remaining dough and cut out small circles with a mold.
STEP 15
Placed circles of dough on the sides of the pie around the circumference. If desired, you can make wavy patterns on the filling with a spoon, but this is not necessary.
STEP 16
Bake the pie in an oven preheated to 190C for about 35 minutes. The surface of the pie should be slightly browned. Cooking time may vary. In each case it is individual and depends on the operating characteristics of the oven. Remove the finished pie from the mold and cool completely.
STEP 17
