For shawarma, it is better to choose not fillet, but chicken meat - from the thigh, with skin, it is more juicy and is ideal for shawarma, I took half a large chicken

For meat, or more precisely in our case - for chicken, we will need the following spices - they will give our dish a characteristic oriental aroma, I specifically chose spices in grains, in my opinion they reveal their aroma much more strongly

Grind the spices in a mortar.

Now pour in a small amount of boiling water - literally 50-100 ml, and the spices will reveal their aroma even more

Now let's prepare the chicken - carefully remove the bones.

In the part where the chicken breast is, make cuts so that the meat part is approximately the same thickness

I also do not recommend cutting the chicken into pieces immediately; meat in pieces is much juicier

Brush the chicken meat with the prepared spices and leave for at least 2 hours, or even better, overnight. I don’t salt the meat right away so that the juice doesn’t leak out of the meat.

Now prepare the so-called white sauce - to do this, mix sour cream and mayonnaise, pass the garlic through a press.

Finely chop the greens - I took a little parsley and dill.

Add the herbs to the sauce; add a little salt if desired.

Stir and the white sauce is ready!

Now prepare the red sauce - of course you can use ready-made ketchup, but you will see how easy it is to make it yourself

Place the tomato paste in a saucepan and heat for 1-2 minutes, stirring constantly so as not to burn.

Dilute starch with 150 ml of water

Add the diluted starch to the tomato paste, stir and heat for another 1-2 minutes.

Add suneli hops or other favorite spices to taste, you can also add fresh cilantro

Stir, heat - and our delicious sauce is ready! My husband is a lover of all kinds of ketchup, so he said that this sauce is even tastier - and I know that this is the highest praise from him!

Leave our red sauce to cool.

Place chicken pre-marinated in spices in a preheated frying pan with vegetable oil.

Pour boiling water over and leave for about 10-15 minutes until the bitterness goes away

Half a teaspoon of salt and sugar, mix - and the onion is ready

Cut the cucumbers into thin half-moons

Cut the tomatoes in the same way as cucumbers
