Shawarma in pita bread with chicken

You definitely won’t be able to refuse such delicious shawarma! This dish is called shawarma in St. Petersburg; everyone else is accustomed to the name shawarma. But no matter how we change the name, the essence does not change - it is meat with vegetables in pita bread with white and red sauce! We are often unfairly accustomed to thinking of this dish as fast food, but in fact it is simply wonderful, because we prepare it from fresh meat with aromatic oriental spices, we also prepare our own sauces, and we choose only the freshest vegetables!

Step-by-step preparation

Cooking timeCooking time: 3 hr
  1. STEP 1

    STEP 1

How to make shawarma in pita bread with chicken at home? Required ingredients. I marinated the chicken in advance - below I will tell you how

  2. STEP 2

    STEP 2

For shawarma, it is better to choose not fillet, but chicken meat - from the thigh, with skin, it is more juicy and is ideal for shawarma, I took half a large chicken

  3. STEP 3

    STEP 3

For meat, or more precisely in our case - for chicken, we will need the following spices - they will give our dish a characteristic oriental aroma, I specifically chose spices in grains, in my opinion they reveal their aroma much more strongly

  4. STEP 4

    STEP 4

Grind the spices in a mortar.

  5. STEP 5

    STEP 5

    The aroma is already magical

  6. STEP 6

    STEP 6

Now pour in a small amount of boiling water - literally 50-100 ml, and the spices will reveal their aroma even more

  7. STEP 7

    STEP 7

Now let's prepare the chicken - carefully remove the bones.

  8. STEP 8

    STEP 8

In the part where the chicken breast is, make cuts so that the meat part is approximately the same thickness

  9. STEP 9

    STEP 9

I also do not recommend cutting the chicken into pieces immediately; meat in pieces is much juicier

  10. STEP 10

    STEP 10

Brush the chicken meat with the prepared spices and leave for at least 2 hours, or even better, overnight. I don’t salt the meat right away so that the juice doesn’t leak out of the meat.

  11. STEP 11

    STEP 11

Now prepare the so-called white sauce - to do this, mix sour cream and mayonnaise, pass the garlic through a press.

  12. STEP 12

    STEP 12

Finely chop the greens - I took a little parsley and dill.

  13. STEP 13

    STEP 13

Add the herbs to the sauce; add a little salt if desired.

  14. STEP 14

    STEP 14

Stir and the white sauce is ready!

  15. STEP 15

    STEP 15

Now prepare the red sauce - of course you can use ready-made ketchup, but you will see how easy it is to make it yourself

  16. STEP 16

    STEP 16

Place the tomato paste in a saucepan and heat for 1-2 minutes, stirring constantly so as not to burn.

  17. STEP 17

    STEP 17

Dilute starch with 150 ml of water

  18. STEP 18

    STEP 18

Add the diluted starch to the tomato paste, stir and heat for another 1-2 minutes.

  19. STEP 19

    STEP 19

    Add sugar

  20. STEP 20

    STEP 20

    Salt

  21. STEP 21

    STEP 21

Add suneli hops or other favorite spices to taste, you can also add fresh cilantro

  22. STEP 22

    STEP 22

Stir, heat - and our delicious sauce is ready! My husband is a lover of all kinds of ketchup, so he said that this sauce is even tastier - and I know that this is the highest praise from him!

  23. STEP 23

    STEP 23

Leave our red sauce to cool.

  24. STEP 24

    STEP 24

Place chicken pre-marinated in spices in a preheated frying pan with vegetable oil.

  25. STEP 25

    STEP 25

Fry on both sides until golden brown

  26. STEP 26

    STEP 26

At this stage it is necessary to salt it, because... it was not salted when marinating

  27. STEP 27

    STEP 27

This is how tasty and appetizing the chicken we ended up with was.

  28. STEP 28

    STEP 28

Now start chopping vegetables - in a proper shawarma there should be the same amount of them as meat. Chop the cabbage thinly.

  29. STEP 29

    STEP 29

Add salt and add a little with your hands to release the juice.

  30. STEP 30

    STEP 30

Onion (preferably red, of course - it is sweeter, but regular onion will do) cut into thin half rings

  31. STEP 31

    STEP 31

Pour boiling water over and leave for about 10-15 minutes until the bitterness goes away

  32. STEP 32

    STEP 32

Then add some apple cider vinegar

  33. STEP 33

    STEP 33

Half a teaspoon of salt and sugar, mix - and the onion is ready

  34. STEP 34

    STEP 34

Cut the cucumbers into thin half-moons

  35. STEP 35

    STEP 35

Cut the tomatoes in the same way as cucumbers

  36. STEP 36

    STEP 36

    Cut the chicken into cubes

  37. STEP 37

    STEP 37

Now let's move on to the most interesting and long-awaited part - assembling shawarma. Grease a sheet of lavash with white sauce

  38. STEP 38

    STEP 38

    Then red, mix both sauces

  39. STEP 39

    STEP 39

    Place cabbage on top

  40. STEP 40

    STEP 40

    Tomatoes

  41. STEP 41

    STEP 41

    cucumbers

  42. STEP 42

    STEP 42

    Pickled onion

  43. STEP 43

    STEP 43

    Chicken pieces

  44. STEP 44

    STEP 44

    Add more sauces on top

  45. STEP 45

    STEP 45

    Wrap the lavash sheets inside

  46. STEP 46

    STEP 46

Twist, trying to tighten it tightly - and the shawarma is almost ready

  47. STEP 47

    STEP 47

All that remains is to fry it in a dry frying pan on both sides, about a minute on each side.

  48. STEP 48

    STEP 48

From these ingredients we got 6 shawarmas, enough for us and our friends)

  49. STEP 49

    STEP 49

    Bon appetit

The children asked to make shawarma. I found a recipe on the website for shawarma in pita bread with chicken at home, and the recipe suits me just right. The filling includes a lot of vegetables, which makes the shawarma juicy and even a little crispy. I cut the cucumber and cabbage into strips, and the tomatoes into thin slices. I have ordinary onions, but thanks to the marinade they became deliciously tasty, with a pleasant sourness. My husband happily ate the leftovers). The recipe has a wonderful way of preparing tomato sauce, I also love it and cook it often, I even use it for pizza. But now I didn’t want to cook it, so I sped up the process by mixing white sauce with ketchup. It turned out delicious too. I didn't fry the chicken, but baked it. I reduced the number of servings to three, so I got three shawarmas. Additionally, I fried them in a dry frying pan - grill. Thus, appetizing, golden stripes appeared on the surface. In addition, the pita bread has warmed up a little and dried out, so it’s more convenient to eat the shawarma. And it turned out super tasty and filling!

I cooked chicken thighs in the oven and there were a couple left, no one wanted to finish them. I decided to make homemade shawarma and looked for recipes on my favorite website. I found a recipe for “Shaverma in pita bread with chicken at home.” I bought the missing ingredients. I cut everything as described in the recipe. I took Caucasian lavash. I made the sauces as described in the recipe. I also added turmeric to the white sauce. I layered all the fillings and sauces on the pita bread. I also added coarsely grated hard cheese. Wrapped the pita bread with filling and fried it on a grill pan. When serving, I cut the shawarma in half. It's more convenient to eat this way. It turned out very tasty. Shawarma is rich in flavor, filling and appetizing. Vegetables are crunchy, cheese is stretchy, sauces add juiciness. Amazingly delicious! Wonderful recipe! Many thanks to the author!

I really like shawarma! I like it better in pita, it’s softer, and good lavash is not always available.
