    Peel the beets and carrots using a vegetable peeler and grate them on a coarse grater.

    Chop the white cabbage with a sharp knife or using a special grater.

    Remove the stems from the tomatoes and cut into medium cubes. You can first remove the skin from them. How to easily peel tomatoes? Wash them and make cross cuts on top with a sharp knife. Place in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin.

    Peel the onion. If the onions are large, then cut them into half rings; if the onions are small, cut them into rings. To avoid irritating the mucous membranes of your eyes when cutting onions, rinse the onion and knife with cold water. The cutting board will not absorb the unpleasant onion smell if you rub it with a slice of lemon before cutting.

    Take a large saucepan and place all the prepared vegetables in it. Add salt and sugar, pour in vegetable oil and water. Place the pan with the vegetables on the heat and cook the vegetables for 20 minutes over medium heat, stirring them occasionally to prevent them from burning.

    Sterilize jars and lids in advance in any convenient way: in the oven, steamed, in water or even in the microwave. A minute before the end of cooking, pour in the vinegar, stir and immediately place the vegetable stock in sterilized jars. Roll or screw them with sterile lids. Cool the jars upside down under a blanket. The workpiece is perfectly stored even at room temperature. Bon appetit!

My rhythm of life does not allow me to devote much time to cooking, so I often have to use semi-finished products. Quite often we bought canned soup preparations, but this fall our vegetable harvest grew and therefore we decided to make our own preparations. We love beets very much, we love borscht, so we have chosen several recipes and will experiment! I liked this recipe for its simplicity and speed of preparation. Our family likes to “chew”, so I didn’t grate the ingredients, but cut them into small cubes. I recalculated the recipe based on 800 g. I took 1.5 times more beets and cabbage than required. It turned out 6 cans of 0.5 liters each. I don’t know what the borscht will taste like, but the leftover homemade dressing was eaten straight from the pan while it was hot. For my taste, I could have added less vinegar and it would have been a little sweet, but most likely this is due to the rather sweet beets. Next time I'll put less sugar.
