Generally delicious, I love fried eggplant with tomato. But I wouldn’t call this dish a salad. Just a snack or something.

I also really love eggplants! I usually fry them in a frying pan (I wash them first in egg, then in flour), on top of the eggplant fried in this way I put a spoonful of mayonnaise mixed with garlic and a slice of tomato. I tried this recipe and I really liked that the dressing was made from sour cream, the taste is more delicate and if you mix it all, it turns out not an appetizer, but a salad). Since I don’t have a deep fryer, I simply fried the eggplants in oil in a frying pan. Thanks for the ideas girls!)

We are already in the season of my favorite eggplants, so your recipe is very useful. The recipe is very good and has many variations: some people like it with mayonnaise, others with sour cream, but we make it with finely chopped cheese (instead of tomatoes), spread fried eggplants on top and sprinkle with herbs.
