Salad with fried bacon cheese and tomatoes
A quick and satisfying salad with fried bacon and cheese. Tender mozzarella, fatty crispy bacon, and greens coexist perfectly in this salad. The whole thing is topped off with balsamic sauce, which gives the dish a special piquancy. In this salad, I appreciated fresh spinach for the first time - before, I had only tried it in pesto sauce and stewed with vegetables. If you don't have spinach, feel free to replace it with arugula. Still, arugula and mozzarella are classics of the Italian genre.

Step-by-step preparation
Cooking time: 25 mins
STEP 1
Prepare the ingredients. Remove the mozzarella from the brine. Wash the greens and dry.
STEP 2
Heat 1 tsp in a frying pan. olive oil.
STEP 3
Fry the bacon until golden brown, pepper. I added salad spices based on lemon zest, sea salt and a mixture of peppers.
STEP 4
Transfer to a napkin to drain excess fat.
STEP 5
Cut the tomatoes into medium slices.
STEP 6
Place tomatoes, bacon, mozzarella and herbs on a dish. You can simply mix everything in a salad bowl, you can make a beautiful composition like mine.
STEP 7
Drizzle remaining olive oil on top.
STEP 8
Drizzle with balsamic sauce.
