STEP 1
How to make a salad with duck and oranges? Prepare your ingredients. Take the breast chilled - the meat will be juicier and softer. Any lettuce leaves are suitable, I have a mix. Wash and dry them. Brown the pumpkin seeds in advance in a dry frying pan.
STEP 2
Wash the duck fillet and dry it well with paper towels, otherwise the excess moisture will prevent it from frying and the meat will stew. Salt and pepper the fillet to taste. Make deep cuts directly through the skin with a sharp knife - this will allow the breast to cook faster. By the way, you can remove the skin, which will also reduce the calorie content of the dish.
STEP 3
Heat a mixture of butter and vegetable oils in a frying pan - adding vegetable oil will prevent the butter from burning, as it has a higher smoke point. Fry the breast over medium heat on all sides for about 30 minutes until golden brown.
STEP 4
Wash the orange, remove the skin and white fibers. Cut the pulp into segments. How to do this is well shown in the video. Limes, lemons, and grapefruits can be segmented in a similar way. That is, citrus fruits with fairly hard films between the slices and fairly dense contents of the slices themselves. With Mandarin, such segmentation is not possible.
STEP 5
Save the juice released for dressing.

How to make a dressing? Combine all ingredients for dressing.

Mix them well with a whisk until smooth. You can change the ingredients at your discretion - take any vegetable oil, use lemon juice instead of vinegar, add any mild mustard.
STEP 9
Cut the finished duck into thin slices. If you want to serve the salad warm, it is better to keep it in a cooling frying pan, covered, until it’s your turn.
STEP 10
Place salad greens on a serving platter. If you have large salad leaves, tear them with your hands - contact with metal when slicing quickly oxidizes and withers the greens.
STEP 11
Cut the cucumbers into thin slices and place on top of the salad greens. Drizzle 1/2 of the dressing over the vegetables.
STEP 12
Place orange slices on top.
STEP 13
Place duck pieces.
STEP 14
Drizzle the remaining dressing over the salad.
STEP 15
Sprinkle the salad with pumpkin seeds and season with freshly ground black pepper. Serve immediately - salad with fresh vegetables does not last long. Bon appetit!
