Fresh vegetables are not only tasty, but also very healthy! So I made a wonderful carrot cheese cucumber salad for dinner. I cut the cucumber into cubes and grated a couple of carrots on a coarse grater. If I wasn't in a hurry, I would have done it on a grater for Korean salads). I replaced the hard cheese with processed cheese, it was well grated into long strips. I crushed the garlic using a medium grater. I didn’t want to season such a wonderful salad with mayonnaise, so I replaced it with olive oil. We liked the combination of products: the juiciness of the vegetables and the softness of the cheese.
