I have plum jam in my recipe, and besides, the taste of plum is decorated with cinnamon. Gingerbread is the best treat!

    Pour kefir, sour cream and eggs into a bowl. Place the jam in a blender bowl and blend until smooth. I used plum jam, but you can use whatever you have. Add it to the kefir mixture. Add sugar or sweetener, vanilla on the tip of a knife or vanilla sugar (about 1 tablespoon), ground cinnamon. The amount of sugar can be reduced or increased. You can also add a little less ground cinnamon, more, or don’t add it at all if you don’t like it.

    Mix all ingredients and beat lightly with a whisk. Add soda slaked with lemon juice or 3% vinegar.

    Be sure to sift the flour. Add it to the liquid ingredients and mix the mixture thoroughly. You should get a smooth, homogeneous dough, the consistency of thick sour cream.

    Lightly grease a heat-resistant dish with vegetable oil. Pour out the dough and smooth the surface with a silicone spatula. Place in an oven preheated to 180 degrees. Bake for approximately 45-50 minutes.

    Once the gingerbread is baked and well browned, check for doneness with a wooden skewer. Remove the finished pie from the oven and cool. Remove the cooled gingerbread from the mold, transfer to a plate, and cut into portions. If desired, sprinkle with powdered sugar, decorate with grated dark chocolate, walnuts or any other chopped nuts, and coconut. Now invite all your loved ones for tea with a fragrant gingerbread of amazing taste!

Instead of sugar I took honey. I didn't add vanillin. I also added allspice and ground cloves to the cinnamon. Thanks for the recipe!) It turned out super delicious! To be honest, I was a little afraid that it contained both kefir and sour cream. I usually bake with one thing: either sour cream, or kefir, or milk. My aunt once cooked an amazing gingerbread, but then I had little interest in cooking and did not have time to take the recipe from her. And her gingerbread was so delicious that all her friends and neighbors asked her to bake it. So this one reminded me very much of the taste, color, and aroma of that same auntie’s gingerbread. It’s very captivating that the composition of the recipe can be changed. For example, replace sugar with honey, take any jam, spices. Preparing the dough seems to be designed for the laziest housewives)) Simply mix all the ingredients, forgetting to sift the flour. In principle, all work in the kitchen takes about five minutes. Then just sit and wait for a delicious pie! The crumb turns out to be very tender, but at the same time elastic, the gingerbread holds its shape well and bakes perfectly. It stayed in the oven for exactly half an hour and rose well. If you calculate the sweetness correctly (I mean according to personal taste), it turns out ideal, not cloying. For those who will be cooking for the first time, I advise you to reduce the amount of sugar (or remove it altogether) by half. Because if the gingerbread turns out unsweetened, you can always serve it with powdered sugar, glaze, fondant, condensed milk, and sweet sauce. Or soak in syrup to adjust the sweetness. In general, the recipe has taken its rightful place in my cookbook, and I sincerely thank the author for it!
