STEP 1

How to bake royal pancakes? Very simple! The dough takes a few minutes to knead. First, prepare the necessary ingredients according to the list. Take the highest grade flour. It is better to take large, selected eggs. Cream is suitable for any fat content. I have 20%.
STEP 2

Pre-melt 50 g of butter and cool. The rest of the oil will be needed to grease the pan.
STEP 3

Break eggs at room temperature into a bowl. Add sugar, salt and beat everything until smooth.
STEP 4

Pour milk and cream into the egg mixture and stir.
STEP 5

While stirring constantly, pour the melted butter into the pancake dough.
STEP 6

Add the sifted flour and stir the dough thoroughly, breaking up all the lumps. Let the dough stand for 5-7 minutes. During this time, it will thicken slightly because gluten will be released from the flour. The finished dough should be slightly viscous, fluid and homogeneous. If the dough is too thick, dilute it with milk, if liquid, add a little more flour.
STEP 7

Heat some vegetable oil and butter in a frying pan over medium-high. The oil should completely cover the bottom of the pan. Pour some batter into a ladle and quickly spread over the entire surface of the pan. Bake the pancake for 1-2 minutes until golden brown, then turn over to the other side and fry for the same amount. Fry the rest of the pancakes in the same way.
STEP 8

Place the finished hearty pancakes in a stack on a dish and serve.. I served with red caviar and herbs. Bon appetit!
