    How to make rice with vegetables as a side dish? Prepare the necessary ingredients for this. For a side dish, it is best to use long grain rice. This rice cooks less and turns out more crumbly. Peas can be used canned, fresh or, like mine, frozen. There is no need to defrost it in advance.

    Take a comfortable deep frying pan for cooking, heat it until hot and pour in a little vegetable oil. Rinse the rice several times in cold water. Then drain all the water and transfer the rice to the pan. Fry the rice for 5-7 minutes until transparent.

    Then add salt, ground pepper and a little curry to the rice. Pour hot water over the rice. Stir. Cook the rice, covered, over low heat for about 20 minutes. During cooking, the rice will absorb all the water and increase in size. Depending on the type of rice, you may need a little more or less water.

    Peel the onion, rinse and finely chop. Cut the bell pepper into small pieces. In a separate frying pan, heat the vegetable oil and fry the onion and bell pepper. Frying will take 4-5 minutes. During this time, the bell pepper will become softer.

    Add fried vegetables, corn and peas to the finished rice. Mix everything and heat in a frying pan for 2-3 minutes.

I changed the set of vegetables to my taste and from what was available. I did not boil the rice in advance, thereby reducing the cooking time, but soaked the rice for about an hour (this time is not included in the cooking, knowing that I will cook the rice, I always soak it in advance and do other things, periodically washing and renewing the water). I also added green pepper. I fried the vegetables one by one, then poured in the rice and poured boiling water over it so that the water covered all the rice and a little 🤏 more. The rice with vegetables on the side is very tasty and fluffy. Corn and other vegetables perfectly complemented the rice and also decorated it. This side dish is ideal for a holiday table.

I like rice with vegetables as a side dish with just such a set of vegetables; the dish turns out to be universal. I cooked it for my husband with vegetables as a side dish as a Lenten dinner, and for myself and the children as a side dish for meat cutlets. After reading the recipe, I wanted to reduce the cooking time a little by changing the order in which the ingredients were added. I cooked in a cauldron for pilaf, because the frying pan was busy. First, I fried the vegetables along with the peas, because they were frozen and needed time to cook. And then added washed rice, corn, poured water with spices and brought to a boil. All that remains is to reduce the heat and evaporate the liquid under the lid. The spices I used were curry, paprika and freshly ground black pepper. It turned out to be an excellent second course. I really like it when neutral-tasting rice is enriched with aromatic spices and absorbs oil and vegetable juices. The result is crumbly grains and bright vegetables, which is both beautiful and tasty.
