STEP 1

How to make rice paper spring rolls with shrimp and vegetables? Prepare all the necessary products. What kind of shrimp is best to use? It will be convenient to wrap king or tiger prawns in a roll, but you can also use regular ones. Select vegetables according to your taste.
STEP 2

Remove the shrimp from the freezer in advance and leave at room temperature until completely thawed. If there is no time to wait, I usually fill the shrimp with cool water and leave it that way for 15-30 minutes. Remove shells from clams and remove heads and tails. There is a dark hollow vein on the back of each shrimp; this should also be removed. Pat the peeled shrimp with paper towels to remove excess liquid.
STEP 3

Heat refined vegetable oil in a frying pan. Add two cloves of garlic, peeled in advance, and leave over high heat for a few seconds until the cloves turn slightly golden. STEP 4

Place the shrimp in garlic oil and fry on one side until half cooked.
STEP 5

Then turn over and leave until done. Be aware that the clams will turn red and curl into rings. If you overcook the shrimp in a frying pan, they will turn out tough and rubbery.
STEP 6

Prepare the vegetables. Peel the onions and carrots, rinse everything under running cold water. I used red onion in the recipe to make the finished roll look more contrasting and colorful. You can take shallots, white salad onions or young green onions. These onion varieties are softer and are perfect for vegetable roll filling.
STEP 7

Grate the carrots on a grater for Korean salads. Cut the cucumber and onion into thin feathers, and cherry tomatoes into thin slices.
STEP 8

Place a sheet of rice paper in cold water for a few seconds. When it becomes soft, carefully place it on a flat work surface.
STEP 9

Place three shrimp in the middle of the sheet.
STEP 10

Next, make a layer with green salad leaves.
STEP 11

Place some carrots, add cucumber and onion.
STEP 12

Then cherry tomatoes.

Overlap the filling from below, fold the edges over the sides, as in the photo.

And then form a roll. Simply put, rolls are rolled like cabbage rolls or stuffed pancakes.

Roll the rest of the rolls in this manner. Before serving, sprinkle with sesame seeds if desired. Done, ready to serve!

I sometimes fry the prepared spring rolls in the remaining garlic oil for a few seconds on both sides.
