    My zucchini is young, so I don’t cut off the skin. Cut them into rings about 5 mm wide.

    Also cut the eggplants into rings and sprinkle salt on top to remove the bitterness.

    Also cut the tomatoes into rings; if you, like me, have large ones, then you can cut each ring in half.

I made ratatouille in the oven with cheese for dinner. To be honest, this is not my first ratatouille in this form, but I’ve never sprinkled it with cheese before. First, I soaked the eggplant rings in salt water to get rid of the bitterness. I usually grease a baking dish with vegetable oil, then lay out the vegetables, salt them on top, add a few tablespoons of water, cover tightly with a sheet of foil and put them in the oven. I bake for about 40 minutes. This way the vegetables are well baked and remain juicy. This time, 5-7 minutes before it was ready, I sprinkled it with cheese and removed the foil. A very beautiful and tasty dish!! I usually don't cook zucchini and eggplant together; ratatouille is the only dish where I like their combination. Plus the food looks very appetizing. Cheese turned out to be very appropriate; it completes the vegetable flavor spectrum. It turned out great, great recipe, thank you!!
