STEP 1
How to make Raffaello salad with chicken and mushrooms? Prepare the following ingredients. The champignons are fresh. Pickled cucumbers. Two eggs, medium sized onion. Boiled chicken breast (can be taken in any form - boiled, fried, or smoked). It is better to cut the salad finely, because it will be served in the form of balls, and large pieces may not look presentable.
STEP 2
Rinse the champignons under running water to remove debris and soil, remove excess moisture. Cut into small cubes. Also finely chop the onion.
STEP 3
Heat vegetable oil in a frying pan and fry chopped mushrooms and onions until tender, lightly salt. Place in a deep bowl to cool.
STEP 4
Boil the eggs until tender, cool and peel. Finely chop the cooled boiled eggs and place in a salad bowl with the fried mushrooms.
STEP 5
Finely chop the pickled cucumbers. Add to previously prepared products.
STEP 6
Finely chop the boiled chilled chicken fillet and add to the salad.
STEP 7
Grate the hard cheese on a medium grater. Grated cheese will imitate coconut shavings, as in candy, so a coarse grater will not work.
STEP 8
Add salt to taste and mayonnaise to the salad bowl and mix. It is better to cool the salad before serving.
STEP 9
It is better to shape the salad into balls just before serving. Using clean hands or gloves, roll the lettuce into balls. Roll each ball in grated cheese. Serve as a cold appetizer.
