Rabbit stewed with carrots and onions in wine and herbs

Juicy and soft stewed rabbit meat with a fragrant aroma. The rabbit turns out very tender and fragrant. The wine is not palpable, there is only a slight aroma. You can add different herbs, each time there will be a different aroma, and instead of wine, you can use beer, but I like wine better.

    STEP 1

Rabbit according to this recipe can be cooked in two ways, either stewed directly on the stove or baked in the oven. It is best to simmer in a cauldron or in a thick-walled pan, since I don’t have a cauldron, I decided to just bake the rabbit in the oven. So let's get started. We take our rabbit (I took half the carcass), cut it into pieces, wash the meat thoroughly and dry it, add salt and pepper to taste (I add salt and pepper immediately while frying the meat).

  2. STEP 2

    STEP 2

In a frying pan, heat the butter with vegetable oil (this way the butter will not burn), add one clove of garlic (you don’t need to peel it, just crush it, it will serve us for flavor). You need to keep an eye on the garlic so that it doesn’t start to burn; if it gets too brown, just pull it out of the pan.

  3. STEP 3

    STEP 3

Place our meat in a frying pan and fry until golden brown, first on one side.

  4. STEP 4

    STEP 4

Then turn over and fry on the other.

  5. STEP 5

    STEP 5

After the meat, add our small onions, carrots cut into large cubes, a second clove of garlic and herbs to the frying pan (if there is little oil in the frying pan, you can add a piece of butter).

  6. STEP 6

    STEP 6

Fry everything for a few minutes over medium heat.

  7. STEP 7

    STEP 7

Place the fried meat in a baking dish (if you bake everything in the oven). Place the fried vegetables on top (if you stew everything in a cauldron, then do not put the meat, just add onions and everything else to it, heat everything together and add wine and simmer until done over low heat).

  8. STEP 8

    STEP 8

Fill our rabbit with vegetables with wine (the wine should cover the rabbit halfway, if it is not enough, add a little water). Cover the pan with a lid (or, like me, cover it tightly with foil) and put it in the oven to simmer - bake at 200 C until done (focus on the meat). The dish is ready! Now you know how to bake a rabbit with carrots and onions.

I had a rabbit already cut into pieces, soaked in water for a couple of hours, and was just going to bake it. But I found a more interesting option: stewed rabbit with carrots and onions) I was very interested in the method of preparing this dish. There were no small onions, I took a large one and cut it into several parts, and divided the carrots into cubes. I first salted the rabbit and sprinkled it with spices (a mixture of dried vegetables and herbs), and then quickly fried it. Then she put everything in a glass form and filled it with wine. My wine is also semi-sweet) I simmered it under a closed lid for a little over an hour. Well, it turned out to be a very tender and fragrant rabbit. There is no specific smell of meat at all. The meat has softened and is easily separated into fibers. At the same time, it was still soaked in the juice of onions and carrots, and it turned out very tasty. And the wine gave its aroma to the meat, there is a slight sweetish aftertaste. In general, this recipe produces an unusual rabbit, but very tasty! I encourage housewives to try this option!

I cook rabbit using almost the same recipe. Delicious. Small heads of onion are much better; chopped ones spread out. The photo is wonderful. You are not only a good cook, judging by the recipe, but an excellent photographer. Thank you for the pleasure.
