Rabbit soup for children with vermicelli
Ingredients
Step-by-step preparation
STEP 1
Butchering a rabbit
STEP 2
We will prepare the fleshy parts according to a different recipe, and the back part can be used for broth
STEP 3
I took this part of the rabbit because it has a lot of bones, and you choose the part you like
STEP 4
Fill with water and cook the broth over very low heat so that the water barely boils, then the broth will remain clear. Don't forget to remove the foam as it appears.
STEP 5
After 20 minutes, add carrots, onions and bay leaves to the broth
STEP 6
Cook for another 1 hour
STEP 7
Let's prepare all the other ingredients for the soup: potatoes, onions, carrots, bell peppers, dried tomatoes, vermicelli and herbs
STEP 8
After an hour, take out the rabbit meat and onions and carrots, leave to cool
STEP 9
Cut potatoes into cubes
STEP 10
Place in boiling broth
STEP 11
Finely chop the onion
STEP 12
Carrots in thin strips
STEP 13
Small diced pepper
STEP 14
Place in a heated frying pan with a little olive oil and fry a little
STEP 15
Finely chop the dried tomatoes and add to the pan
STEP 16
Separate the rabbit meat from the bones and return it to the broth
STEP 17
Finely chop the greens, set aside some greens for decoration
STEP 18
When the potatoes are ready (and it took me 20 minutes), add the fried vegetables to the soup, bring to a boil, add the vermicelli, cook for 5 minutes, and then add the herbs and turn off. Let it sit for 10 minutes
STEP 19
Pour the soup into bowls, sprinkle with fresh herbs and invite the kids to dinner!
