An easy, healthy and delicious soup for our beloved children! When I managed to get hold of a rabbit, I decided to please the kids with this soup - it’s easy to prepare and it comes with our favorite noodles, which mine just adore! My kids appreciated it, and I was pleased to look at their empty plates) It turned out very tasty!

I rarely buy rabbit and usually stew it according to this recipe. Next time I will make this soup.

I defrosted the rabbit to bake and decided to leave the spine for the soup, anyway there is not enough meat, but the bones are rich. Rabbit makes a very nutritious and dietary soup. When the children were little, I often cooked them rabbit soup with noodles or just gave them boiled meat. I like the taste of rabbit, especially if you soak the meat for a couple of hours in cold water. By the way, I do not recommend adding vinegar to the water; the meat will become sour and tough. I once followed this advice and we finished the rabbit with difficulty. Let’s return to the soup) I cooked the bones for about an hour and a half at a low simmer, I wanted the broth to become richer. Then I removed the meat and sent it back to the broth. I didn’t add bell pepper to the frying because the children don’t eat it. Therefore, I simply put the peeled peppers to cook together with the broth, then threw them away. There were no dried tomatoes, so I added a couple of spoons of tomato to the soup instead. The tomato acidified the soup a little and made it more “voluminous”. I added fresh greens to each plate, so it reveals its flavor more strongly, it seems to me. The soup came out nourishing, rich, delicious) And the broth was clear, pleasant to look and taste. I advise everyone to try rabbit soup, you won’t regret it!
