Sweet and sour dessert made from crispy pumpkin with a citrus aroma - delicious. A very simple dessert that is always a hit even with those people who don’t really like pumpkin. The fact is that in this dish the pumpkin in taste and smell does not resemble itself at all, as we are used to in pumpkin porridge or baking filling. Here it is crispy and sweet and sour, and the dessert smells of citrus, so from the first spoon no one will even guess what this dish is made from.

    The main thing is to choose the right pumpkin. I don't know what this variety is called, but it is lemon-colored, not orange-yellow. This pumpkin is hard and has almost no smell, which is exactly what is needed for this dish. A regular orange sweet pumpkin won't do this.

    Pour boiling water over the dried figs for 10 minutes and leave to steep under the lid.

    Wash the citrus fruits thoroughly, dry them and remove the zest from them in thin strips, without capturing the white pulp.

    Squeeze the juice from lemon and orange into separate containers.

    Cut the pumpkin into large pieces, cut off the peel.

    Cut the pulp into pieces about 0.5 cm thick of any shape.

    Drain the water from the figs, pat them dry with napkins and cut into small cubes.

    Place the pumpkin in a saucepan or thick-bottomed pan, add figs, lemon and orange zest, and sugar. Pour in orange juice and a little lemon, to taste. If you want to get a pronounced sourness, you can add the juice of half a lemon. Stir the contents of the pan and bring to a boil over low heat with the lid tightly closed. After boiling, simmer over low heat for about 7 minutes. During this time, you need to stir the dessert once.

    Turn off the heat, remove the lid and place the dessert in a bowl, placing it in a container of cold water so that the pumpkin cools as quickly as possible. Stir the cold dessert again, if necessary, add lemon juice or sugar to achieve a balanced taste. Before serving, keep in the refrigerator for 2 hours and stir.

KitchenFairy, a very unusual dessert, this is the first time I’ve heard of this. But I can imagine how delicious it is))) Lemons, oranges, pumpkin, figs - everything went into use, and the color of the fruit and pumpkin are very similar to each other, just like ORANGE, I once baked the pumpkin with sugar in the oven, but to do so - simply professional, top class, excellent dessert!

At presentations of Zepter cookware, they used to always prepare such a dessert, only with raisins, not figs, demonstrating the capabilities of the cookware. And, as they assured, only in the dishes of this brand does it turn out as it should. But I also cook it in another thick-bottomed container, and I don’t see much of a difference. But I am grateful to Zepter for this recipe and a couple of others, which I have since adopted)

Good. delicious dessert!!! I love pumpkin, but I’m still a long way from getting my pumpkin, and you won’t find figs during the day these days, unless it’s jam. But I’ll wait until autumn and I’ll definitely cook it!!!
