Step-by-step preparation
Cooking time: 40 mins
STEP 1
Prepare the minced meat. Mine comes from the breast.
STEP 2
Separate the yolks from the whites.
STEP 3
Grind the yolks with soft butter.
STEP 4
Mix in minced meat, herbs and breadcrumbs
STEP 5
Salt and pepper, add a few tablespoons of cold water and beat well until the mass becomes homogeneous and airy.
STEP 6
Beat the whites into a strong foam.
STEP 7
Add the whipped whites to the minced meat in several additions.
STEP 8
Form a cutlet with a spoon and roll in flour.
STEP 9
Fry in a frying pan heated with oil for 3-4 minutes on both sides. Do not cover with a lid so that juice does not start to come out of the cutlets.
STEP 10
Tender, light cutlets are ready!

Thanks for the new cutlet recipe for me! For the first time I will add pan. breadcrumbs, not to mention the fact that I have never separated an egg before... A very tempting recipe!!!
