STEP 1

How to make PP khachapuri with cheese in the oven? Prepare your food. For the dough, take low-fat natural cottage cheese. It is better if it is not soft and pasty, but rather dry. But you shouldn’t use grained ones either - the dough will be uneven. You can use not only rice flour, but also corn, whole grain, or a mixture of them.
STEP 2

Place the cottage cheese in a bowl, beat the egg into it, add a pinch of salt. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Using a fork, mash the ingredients until smooth.
STEP 3

Gradually add flour and knead the dough. You may need a little more or less flour than the specified amount, look at the consistency of the dough. It will begin to stick well and will practically stop sticking to your hands.
STEP 4

Line a baking sheet with baking parchment. Divide the dough into two parts. Form each part into a “boat” with a flat bottom and low sides. Place the baking sheet with the preparations in the oven, preheated to 180°C, for 20-30 minutes.
STEP 5

While the dough is baking, prepare the filling. Prepare food for her. You can use any cheese - hard, semi-hard, soft, like mozzarella. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well.
STEP 6

Grate the cheese on a coarse grater.
STEP 7

In the meantime, the “boats” should turn golden. The exact time will depend on the features of your oven and the size of the khachapuri. Remove the pan with them from the oven, but do not turn off the heat. If the dough puffs up while baking, prick it with a fork, releasing excess air.
STEP 8

Place grated cheese in the center of the dough. Place the pan back in the oven.
STEP 9

Wait for the cheese to melt well. It took me 5 minutes. Remove the pan again. Using a fork, carefully push the cheese apart in the center of the boats. Pour the egg into it, after breaking it into a bowl. Khachapuri according to this recipe is not very large, so I used one yolk, without white.
STEP 10

Place the khachapuri back in the oven. Leave them for another 5 minutes to allow the white (if you are cooking with it) to set. But the yolk would remain liquid.
STEP 11

Serve the finished khachapuri to the table immediately - they are delicious hot, piping hot. Bon appetit!
