STEP 1

You can use only one type of flour, that is, only rice or only whole grain. Or replace it with corn or oatmeal.
STEP 2
Any cheese is suitable for the filling: hard, semi-hard, soft. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well. Wash the eggs. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. Wash the greens and dry. It can be used for serving. Turn on the oven to 180 degrees in advance.
STEP 3
Place cottage cheese in a bowl, add an egg and a pinch of salt, stir until smooth.
STEP 4

STEP 5
Knead a soft, slightly sticky curd dough.
STEP 6
Divide the dough into two equal parts.
STEP 7

STEP 8
Grate the cheese on a coarse grater.
STEP 9
Sprinkle each “boat” with grated cheese. Leave a little cheese for the top of the khachapuri.
STEP 10
Place the khachapuri in an oven preheated to 180 C for about 20 minutes. The dough should be baked and the cheese should be slightly browned. Carefully break an egg into each “boat”.
STEP 12
Sprinkle the remaining cheese on top of the khachapuri.

Return the khachapuri back to the oven for approximately 3-5 minutes. The egg white should set, but the yolk should remain runny.
