  1. STEP 1

    STEP 1

How to make PP khachapuri in Adjara? Measure out the required ingredients for the dough. Choose fresh cottage cheese, with minimal moisture, non-hard, with a fat content of 2-5%. Read more about cottage cheese in a separate article, link at the end of the recipe. If the cottage cheese is in large grains, pass it through a blender to make the dough more homogeneous. You can use only one type of flour, that is, only rice or only whole grain. Or replace it with corn or oatmeal.

  2. STEP 2

    STEP 2

Any cheese is suitable for the filling: hard, semi-hard, soft. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well. Wash the eggs. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. Wash the greens and dry. It can be used for serving. Turn on the oven to 180 degrees in advance.

  3. STEP 3

    STEP 3

Place cottage cheese in a bowl, add an egg and a pinch of salt, stir until smooth.

  4. STEP 4

    STEP 4

Combine two types of flour, add baking powder and sift through a sieve into the curd mass, mix. Read about all the nuances of working with baking powder in a separate article, link at the end of the recipe.

  5. STEP 5

    STEP 5

Knead a soft, slightly sticky curd dough.

  6. STEP 6

    STEP 6

Divide the dough into two equal parts.

  7. STEP 7

    STEP 7

Roll each part of the dough into an oval cake and form a “boat” with sides. You can do this directly on parchment. You can choose the right parchment paper by reading a separate article about the features of parchment, the link is at the end of the recipe.

  8. STEP 8

    STEP 8

Grate the cheese on a coarse grater.

  9. STEP 9

    STEP 9

Sprinkle each “boat” with grated cheese. Leave a little cheese for the top of the khachapuri.

  10. STEP 10

    STEP 10

Place the khachapuri in an oven preheated to 180 C for about 20 minutes. The dough should be baked and the cheese should be slightly browned. The baking time and mode may be different, as they depend on the operating characteristics of the oven. Focus on your technique. Useful information on this topic can be found at the link at the end of the recipe.

  11. STEP 11

    STEP 11

Carefully break an egg into each “boat”.

  12. STEP 12

    STEP 12

Sprinkle the remaining cheese on top of the khachapuri.

  13. STEP 13

    STEP 13

Return the khachapuri back to the oven for approximately 3-5 minutes. The egg white should set, but the yolk should remain runny.

  14. STEP 14

Looking into the refrigerator today, I saw a pack of cottage cheese, and decided to look for a delicious recipe made from cottage cheese. After reviewing a lot of recipes, some of which I had already cooked many, many times, I came across a recipe for Adjarian-style PP khachapuri. The photos from the recipe seemed incredibly beautiful and attractive. All! It was decided to cook them. I liked the composition of the recipe, there are no ingredients that are difficult for the stomach, although I didn’t have any baking powder, I added slaked soda, the boats turned out to be very fluffy, which most likely was the reason that some of the protein leaked out, and I didn’t add some at all. The aroma from the oven came out after about 10 minutes and it immediately made my mouth water. After adding the egg and the remaining cheese, it turned out to be very difficult to wait 3-5 minutes) it smells really delicious. Adding greenery adds its own twist (I added dill). After the first bite it is impossible to stop. They prepared khachapuri for the children, they ate everything down to a clean plate, making me promise that as soon as I had cottage cheese at home, I would make them again. The cheese intertwined with the taste of cottage cheese, just like in expensive restaurants, they mixed and created an “explosion” for the taste buds. I am very glad that I did not waste my time and products. Satisfied children, satisfied mother) we’ll cook for everyone this weekend. I think my husband will check it out with pleasure. Thanks to the author, the recipe is amazing!!
