    Heat the vegetable oil in a frying pan, place the potatoes on it and fry them for about 15 minutes, stirring occasionally. During this time, the potatoes should brown on all sides.

    Add the zucchini to the pan with the potatoes. Fry everything together for about 10 minutes, stirring occasionally.

    When the zucchini releases its juice, salt and pepper the vegetables and sprinkle with thyme leaves. Fry for another 5-7 minutes. Instead of frying potatoes and zucchini, you can simmer them by adding 200 ml of water to the pan. This will make the dish less caloric.

    At the very end, add a piece of butter to the pan. It is not necessary to add oil if you see that the vegetables are already heavily saturated with fat and there is still vegetable oil left at the bottom of the pan. Cover the pan with a lid and cook for another 3-5 minutes.

I did not fry the potatoes and zucchini in a frying pan, but stewed them, as the author advised at the end of the recipe, with the addition of water and with the lid closed. I used dried thyme. I usually add spices to dishes very carefully, with some caution, but here thyme goes so well with vegetables that I wanted to try it fresh next time. Thanks for the simple and interesting recipe!
