Potatoes in lard with garlic and flour

Set of ingredients

Cut potatoes into slices
STEP 3
Cook in salted water for 5 minutes from boiling - this way the potatoes will be thoroughly fried and get rid of excess starch
STEP 4
After 5 minutes, remove the potatoes and dry
STEP 5
Finely chop the lard. Can be replaced with cooking oil or just vegetable oil
STEP 6
Heat in a frying pan until cracklings appear
STEP 7
Lightly roll the potatoes in flour, just a little bit literally, so that they are not wet
STEP 8
Fry in a heated frying pan over fairly high heat, there is no need to stir at all for the first 5 minutes, then stir very carefully, prying it from below
STEP 9
Fry the potatoes until golden brown
STEP 10
At the very end, add salt and a pinch of black pepper.
STEP 11
A pinch of red hot pepper
STEP 12
Some aromatic herbs (I have a mixture of Provençal herbs)
STEP 13
Pass the garlic through a press or grate it on a fine grater
STEP 14
Stir and turn off the heat
STEP 15
Serve with sour cream and salad, I have sauerkraut. Bon appetit!
